Sloppy Janes and Weekend Excitement

How was everyone’s day today? Mine wasn’t too bad – I stayed busy, but not I’m-losing-my-mind-busy, at work today, so that was nice. What’s even nicer is tomorrow’s FRIDAY. This week seemed to breeze by for me. Seems kind of odd though, because usually when I have things to look forward to, the time passes sooo slowly. And course, I have two HUGE things to look forward to this weekend.

First off, the race is almost here!! I decided to take a rest day both today (with the exception of a half hour Niko walk) and tomorrow. It’s weird, I’m already craving a good sweat session for tomorrow. I never do two rest days in a row, so it will be different. Don’t worry, I won’t cave into my cravings – I know how good rest days are on Race Day Eve. 😉

I didn’t break any of the rules for my challenge today, so I’m going strong there. Now I just need to prepare. I haven’t decided what exactly I’m going to wear yet (which is very important! ;)) and I haven’t decided what to eat for a pre-race breakfast. I’m thinking maybe a breakfast cookie? I usually don’t eat when I work out first thing in the morning, but I know I’ll want some fuel in me. Decisions, decisions…

Ahh I’m so excited for this. We got the tickets in February, so we’ve been looking forward to it for a long time. I can’t believe it’s here. Hopefully I’ll be able to get a nap in after the race so I can party it up at the concert…Uh oh, I just realized I’ll need to pick out something to wear to this festivity too. Think maybe a maxi dress would be OK? Maybe I’ll do an outfit post tomorrow, to see if I can get any opinions out of you guys 😀

Dinner Success #2!

So tonight I cooked an awesome meal: a healthy rendition of Sloppy Joes. This recipe is a variation of the recipe in this months Clean Eating Magazine. This recipe is easy peasy by the way.

Just brown some ground turkey:

..Add in about a cup of diced yellow and red bell peppers. Cook for a couple minutes. Add in a diced yellow onion, and cook for about 4 more minutes.

Then, sprinkle in some chilli powder, garlic powder, and salt.

Oooh, aaahh 😛

Next, add in a half cup of diced tomatoes, 1 T tomato paste, 1 c. corn, 1 c. chicken broth, and 2 T soy sauce. Bring to a boil, and then cover, and simmer for 20 minutes.

While simmering, eat some crackers with cheese:

And a peach!!

After 20 minutes, add in a T of arrowroot or thickener of choice, and stir some more.

“Slop” the mixture on a bun and top with cheese of choice (I went with pepper jack..mmm…) and devour.

With the joes, I made some potatoe fries (with olive oil, salt, and peppa,) and some of Tuesday night’s corn bread. Yes, a lot of carbs, but I’m eating slightly carb heavy so I can have an abundance of energy on Saturday. Good excuse, heh? haha

Yet another dinner success. We both enjoyed it thoroughly, though Shane much prefers ground beef to ground turkey. I don’t really care – I can’t tell too much of a difference. Is it a girl thing or am I just an odd ball? Perhaps I should call them Sloppy Janes…

Either way, I’m beginning to gain back my dinner-making-abilities confidence! 😀 Woo hoo!!

    And the Sloppy Joe name change is very clever haha.. I like it! I feel like men definitely like their beef so turkey sloppy joes should rightfully be called sloppy janes!

  2. Haha thanks! I just get nervous calling certain things "women food." It's kinda generalizing, plus I saw the way the female judge chefs on Next Food Network Star reacted when a contestant called something "girlie food" or something to that extent – not well! haha

  3. Jimmy Buffett sounds like fun. I went probably 7-8 years ago and drank too much and fell asleep!!

  4. Have fun at Jimmy Buffet! I just made a rockin dinner even though it was very simple! A banana peanut butter protein shake with a turkey, ham and cheese wrap! Yumm!

  6. WOW – you really do have quite an amazing weekend coming up! Enjoy the race and the concert. That din din looks so good. For me, dinners that were amazing: sweet potato and jicama fries, yucky dinners= raw squash mix bleck!

    Your sloppy Janes look amazing, and I love how you include the snacks during cooking in the instructions because I always snack while I'm cooking too! 🙂

    I actually tried something new today, and it turned out great, eggplant mini pizzas, it was a success!!
