Beginner Black Bean Burgers

Good morning! Is this week taking for-ev-er for anyone else? It really seems like today should be Friday… oh well, keep hammering away at it!: )

Well, I got another SUCCESS! out of dinner last night. I was very, very hesitant about trying this one out. I was confident that I’d like it, however, Shane was another story. But low and behold, he thought itwas awesome!! Maybe Shane will turn into a flexitarian too πŸ˜‰ LOL. I guess he has little choice since I usually cook dinner, hehe…nahh I’d be flexible and accommodate for him. πŸ˜€

Anyway, the best part about this meal is that it was cake! Well, it was actually black bean burgers, but they were as easy as cake πŸ˜‰

I opened a can of organic black, dumped them in the food processor, and processed for about 5-10 seconds – just to slightly mash them up.

Next, I added 6 T. of whole wheat flour (I probably should have measured in cups, but I was a little scurred of adding too much,) and 5 T of corn meal.

I’ll have to say, next time I’ll substitute the corn meal for whole wheat bread crumbs. Hubski and I both agreed this would make them even better.

Then, I added cumin, chili powder, salt, pepper, and a wee bit of hot salt, and stirred it all together.

The mixture should be firm enough now to make little patties in your palms by now. If it’s not, add in another T of whole wheat flour/corn meal/bread crumbs.

Heat a skillet to medium heat and spray with cooking spray. After forming patties, (my mixture was able to make four medium sized burgers) sprinkle corn meal on each side, and toss in the pan. Grill each side for about 3 minutes. Multi-task by throwing the buns on to get some toasty buns for your burgers.


Top with cheese (if that’s your style) and place them on the toasty buns.


For a side, I made Kath’s PBJ fries, except I used almond butter, and instead of regular toast, I used Ezekial’s cinnamon raisin.


yum-topia! Shane went on and on about these. And they’re so freakin’ simple too!


They complimented my burger, which I topped with pickles, ketchup, and mustard, very nicely, if I do say so myself.

You all should try these things if you haven’t already! I also loved how this meal: A. is pretty darn cheap, B. is completely practical. I had all the ingredients in my pantry as staples, and C. didn’t leave me with that gross, lethargic, full feeling! πŸ˜€

Btw, this is my second meatless day in a row (honestly not even trying to avoid meat, here, but it’s not too shabby :))
