Taco Tuesday!!

Hi everyone! How was your Tuesday? Mine went just great! Much better than my Monday went. Hopefully today goes just as well, if not better πŸ˜€

Although I fell asleep at 9:30 last night after consuming two heft sized glasses of wine because I was so tired, I decided to sleep right on through my morning work out. I’ve learned to never, ever feel guilty about this, by the way. Unless I’m going to be getting 8 hours of sleep or more (a.k.a. the weekend,) I honestly don’t feel an ounce of guilt for choosing sleep over a work out.

This is because A. I needs my sleep. Sleep is very important. and B. I usually will just do my workout after work.

Work was work, but went by fast, and I had an ammaaazing bowl of oats to start it off with:

Yum-topia. It had oats, Bees Knees Peanut Butter, blueberries, and half a smashed banana.

Today I had planned on going to the gym and cranking out 3.5 miles, but instead, I took advantage of this amaaazing weather we’re having, and jumped on the trail after work. (See? I told ya I usually make up for a.m. skips with p.m. workouts!) After running 3.7 miles out in the sunny, cool weather I felt great! Oh, one con though – I swallowed a bug in mile one. Ew. Not cool.

Anyway, here’s my other stats:

Like last time, I was in the company of many other runners on this run. So much fun πŸ˜€

When I got home, I made taco salads for Shane and me. This turned out to be a hit!!

All I did was grill some green bell peppers, black beans, Spanish rice, and chili peppers on the stove. Then I added some chili powder, garlic salt, and cumin. In a bowl, I layered shredded romaine lettuce, Garden of Eaten’s Hot Blue chips, my stove mixture, and repeated once. Finally, I topped the salad with some homemade guac, sour cream, and salsa.

For Shane’s meal, I added browned hamburger. He was thoroughly satisfied! I told him, “It was so easy too!” to which he replied, “so that means we’ll be having it again soon, awesome!” haha Dishes that are difficult don’t make a repeat appearance too often in this household. I just don’t have the time πŸ˜›

After digesting my Mexican Fiesta and taking the pupster for a walk, I settled down with these three things:

hehe. I have got to finish this book. It’s taking me for-ev-er!!! I can usually bust through a book in a week. I blame my iPhone. Honestly, I do. Two other friends have loaned me books now, and I want to get started on them so I can give them back! It’s not like the book sucks or anything, I’m just having a hard time finding time to read it.

After about an hour of reading, I settled in on the couch with the hubski, and enjoyed a small bowl of Annie’s Homegrown Bunny Grahams.

I’m addicted to these cute little bunnies. It’s official.

  1. I love reading too but I agree that finding time to read is hard! Last year I got in the habit of reading a few minutes every night before bed. I need to get back into that!

  2. I am always into a book. I just finished Randy W. Wright's, TWELVE MILE LIMIT and Harlan Coben's, THE INNOCENT. Like Christina, I usually read at night before bed or during a tv program that my husband chooses:-( So, now I'm reading Coben's, JUST ONE LOOK, very scary!

  3. My favorite author = Stephen King. His stories are so enthralling!!

    I apologize for asking this question, since I'm sure you've already answered it; but what kind of dog is that?? Looks a little like mine πŸ™‚

  4. I love reading but also find it hard to find the time. I don't really have a favorite author but I like books that are light and entertaining. When I do have the time to read I want to be entertained and not have to do a lot of thinking.

  6. I LOVE reading. I esp love the twilight/HP stuff, as well as the Sookie Stackhouse series.. I love series. Otherwise I love dean koontz. anything with vamps or supernatural things pulls me in.

  7. Anything that's easy reading and entertaining. The Shopaholic series, The Stephanie Plum books, Twilight, and currently obsessed with the Sookie Stackhouse books (which is incredibly obvious on my blog!). Anything with a fun story and a little suspense.

  9. I love reading too. It really just depends on the mood I'm in. Right now I'm reading a book of short stories by the Mystery Writers of America, but I also really love, True Crimes and Urban Romance.

  11. MMM taco salad! I too cherish my sleep…except when I run after work, I'm always too antsy to fall asleep at a decent hour…and so the cycle continues ha.

    Figured I'd continue my tweet here hehe: I run in light stability shoes and tried on the Asics 2140 since a lot of people that run in it seem to love it. My feet, not so happy. it just didn't fit right around my ankles and it didn't feel very flexy. I love my Mizunos and the Nikes I got because they were pretty much felt the opposite of the Asics hehe. You could check out the Mizuno Rider or Creation or the Nike Pegasus or Vomero. Those are all neutral, pretty cushy shoes.

    I never feel guilty for choosing sleep over working out either. But I do it way more often I think, haha. I also just kind of enjoy working out in the evenings because my legs are itching for activity after sitting at a desk for 8 hours.

    OMG, I am SUCH a huge reader. I don't really know if I can choose any single books or authors, but I tend to really like books by Sarah Dessen. She writes such honest, heartfelt novels!
