What’s up loves? How’s your Monday treating you? Hopefully quite nicely 🙂
First off, some housekeeping business:
– Haven’t checked in on everyone’s progress for Complaint Free February in a while! How are you guys doing? Even with a week left, I still find myself struggling, but I’d wager to say the amount of complaints coming from me have decreased significantly!

I’ve had quite the busy Monday myself. Although my alarm went off at 4:45 to go to the gym, I made an executive decision that today was officially my rest day, and reset the alarm for 6:10. Muuuuch better:)
After getting ready and taking the puppy for a walk, I had a wondrous breakfast cookie before leaving for work:
Classic combo with a few addins: 1/3 c. oats, 1 T. chia seeds, 1 T. flaxmeal, 1 T. hemp powder, 1 packet stevia, 1 smashed ripe nanner, wee handful of raisins. About half way through eating, I also threw in a handful of raw pecans for some healthy fat 🙂
Instead of Monday it should have been called Meetingday at work. I usually have 1-2 meetings today to prep, go to, and make adjustments after, but today I had 4! It definitely made the day go by quickly, though 🙂
Needless to say, lunch was eaten at the desk so I could bang through some to-do’s:
The cafeteria has quite an impressive salad bar! And some how this lil’ guy jumped in at the end:
Mmm corn bread. I can never quite get down how to make decent cornbread at home, but whenever I buy it somewhere else, it’s always SO good. Perhaps because we don’t use the same amount of butter…ignorance is bliss! 😉
After work I came home, prepared some meat lasagna for the hubski and veggie lasagna for myself, then had him put it in the hot box, and I took off to train a new client at the gym!
On the way there, I sipped on a Green Monster:
The training session was a blast. My new client is a hoot! 😀 When I got home, I finally got to gorge on some veggie lasagna:
I used spelt noodles for this recipe. I wasn’t too sure how it’d turn out – I usually just use regular or whole wheat, but they turned out deliciously yummy. However, I totally forgot I was out of mozzarella in the middle of cooking, so instead I used goat cheese with the ricotta. It turned out really good though! The tanginess of the goat cheese balanced out the sweetness of the ricotta quite well 😀
Now I’m finally relaxing with the husband – we’re watching our latest obsession, 24. It’s pretty intense, I gotta say. Jack Bauer is one crazay mofo.

What’s something that no matter how many times you try, you just can’t make a version as good as the store/cafe/restaurant? I can’t, for the life of me, make good cornbread! It always comes out all dry and bland. Maybe I need to just stop trying to make it healthy, haha
