My Monday Night Pork Me Ups

Yesterday wasn’t too bad for a Monday, I gotta say. I left work almost two hours early, because I finally got to the doctor’s to see what’s wrong with my ankle. More on that in a few..

While at work, I was very productive and plowed through my tasks. Notable snacks include this banana:


It’s notable because it’s been in my banana keeper (above) for three days, and looked the same as when I put it in there as when I took it out! This thing is seriously awesome. NOt only does it keep your banana from getting banged around and squished while transporting it in your purse, but it keeps it fresh longer! On the banana was some Dark Chocolate Dreams Peanut Butter. Yum 🙂

Also this Amazing Grass Berry Bar:


I really wanted to like this, I did. But I just didn’t. The peanut butter one is really good! But this one wasn’t so great. The first Amazing Grass product I didn’t care for!

So I left work around 3 to go to the doctor’s office. They took x-rays, which I’m sure is procedural, and nothing came up – no stress fracture, so that’s good 😀 However, the doctor told me I have tendinitis. He looked at my feet and said I stand on the outter edge of my right foot, which is definitely causing the ankle pain.

This made me pretty mad since the girl at Often Running told me I had a neutral stance and gave me cushion shoes. Thankfully the second time I went there, the manager helped me, and actually took the time to watch me run and listen to me and gave me the opposite of cushion shoes! Urgh…Always ask for the manager if you want to be sure I guess.

So a pair of orthodics and a px to an anti inflammatory later, and I was out the door. It could have definitely been worse. The doctor said I didn’t have to stop running:D However, if the orthodics and Px don’t help, then I do:( *Please please please help.*

Luckily, straight from the appointment, I was going to a 60 minutes full body massage. Hells yeaa-aahh! That felt sooo good. My friend Trina is a masseuse, and I haven’t let her work on me before, so I was super pumped. She did an AWESOME job. She even massaged my face! Wow, I feel 1000 X’s better. Anyone in the central IL area looking for a massage? Contact me and I’ll hook you up 😉

I didn’t end up getting home until about 7, but I was determined to make another recipe from The Food You Crave.

Apple Glazed Pork Chops and Slaw!

The meal contained two portions – the pork chops and the apple cole slaw. I’m pressed for time at the moment, so I can’t type out the complete recipe, but the cole slaw had a slew of ingredients and it cooked in the stove:


Sooo good. I was a little hesitant – especially if Shane would like it. Alas, we both devoured it.

While cooking, I had a little of the edmamame hummus I made on Sunday. This stuff is seriously SO damn good.


I cooked the chops on the stove, too – about 3 minutes per side. Then after the cole slaw was cooked, I put the choppies back in the pan, and smothered them with the slaw to kick up the flavor a notch. The result? Nothing short of complete and delicious AWESOMENESS:


Actually, that’s Shane’s plate. I thought his was prettier than mine. I had about half of this – but the same ingredients – and the whole glass of wine 😉

After dinner, Shane and I settled in down in the theatre for what will be our Monday night tradition this fall. We watched One Tree Hill! I didn’t know that Lucas and Peyton would be gone, though. That’s kinda weird. Oh well, Peyton kind of bothered us anyway, and Lucas, well, he’s a d-bag in real life. What? He is!!

What show are you super pumped for this fall? I’m also excited for Gossip Girl and Desperate Housewives. Yay! 😀

A New PR for a 5K Race!

Hi Bloggy friends! Sorry I haven’t been able to post my race re-cap until now! My busy Friday has overflowed into today, and I haven’t had a moment to sit down and blog!

Race Re-Cap

This morning I woke up around 6:00 a.m., regretting the 2 margaritas I had last night at bunco. I also had day one of the visitor who lets me know I’m not pregnant. Race Day. Ohhh race day.

After getting over it, I made my way to kitchen for coffee and copious amounts of water and some breakfast.


I smushed a banana with some Barney butter and spread it on a Flat Out! wrap. It was sooo good. I can’t believe how awesome these wraps are. Best thing since sliced bread, hands down. 😀 And P.S. look at this CUTE “banana keeper”


It’s from Tupperware, and it’s going to make taking bananas to work SO much easier-and cute 😉 I just had to share it with you guys 😀

Since the race was in my home town, and I was running with my madre, I stopped at my parents’ house before going to the race.


No, no dad popping out of bushes to snap pictures this time. This time, he and my brother came out to support me by being innocent by-standers.

I pounded out the first mile quick. Hearing the man with the stop watch announce “8:14!!!” as I sped by, rocked my world! At first. Then I started to panic that I would wear myself out after a bit. And I looked down and saw my heart rate was already 181. Yikes.

So I paced myself a little better for mile two, but I was still going strong. My heart rate was in the 180’s for a good portion of the race. Oops. My max HR actually ended up being 193 – not good.

Once I got to the third mile, it was smooooth sailing. That is, until my side decided to tense itself up as hard as it could, and nearly made me double over in pain. I was seriously only a tenth of a mile to the finish line, but I felt like I was being stuck with a knife with each step. But I used the mantra that “I AM A MACHINE!” and trucked it to the finish line, making a personal record of 26:46! Holler!!

Obviously I was so excited that I beat my best time of 27:00. However, when I crossed the finish line I definitely didn’t look happy. A few minutes later and the pain was gone. Pain is fades, but personal records are with ya for the long haul! Well, until you broke them again I suppose 😉

After the race, I took my dad and big bro up on an offer to get some grub at a little place in Pekin called Cobbler Corner:


It’s a little mom and pop restaurant that’s always packed with patrons!

I had the veggie omelet – light on the butta, with some homefries – heavy, I’m sure, on the butta. Oh well, I ate em anyway 😀


And they were delish! My brother, dad and I always used to go out for breakfast growing up, so it was nice to do that with them:)

Next Race: Next Saturday’s 10K. This is my first 10K, so I’m SUPER pumped! My friend, Debby will be joining me for this running extravaganza. Woop woop!

Hola! I am proud to say that I did not catch myself feeling stabby once today! I think that’s a first for me on a Monday. Putting forth the effort to be optimistic on a Monday did, however lead me to notice how crabby and rude others can on Monday. I didn’t let it bother me though. I mean, let it slide right? It’s their right to be crabby on a Monday?

Anyway, today was pretty status quo. Work wasn’t insane like last week which is nice. I got some “house cleaning” stuff done there, which is something I haven’t been able to do for a while.

I finished my “butt-load” (heh) of pancakes this morning for breakfast. They were just as good the second day! After scarfing them down, I had about one bite left and thought, “oh, I forgot to take a picture!” No worries, to see them in their delicious entirety, they’re right here.

Lunch was spent running errands, so I had to grab it on the go and eat it back at work. It ended up being a Quiznos oven roasted chicken chopped salad. Probably not the best choice, but it was sure yummy 😀

Since it was somewhat nutritionally void, I followed it with a banana dog.

After cleaning up some cabinets at my desk, I noticed it was already time to go home, so I grabbed my Peanut Butter Cookie Lara Bar. Mmm (unpictured.)

I’m glad I kept myself busy, because I tend to get a little snacky at work when things are a little slow.

Work it Out!

Today’s workout was abs, legs and some elliptical!

Abs was a whole lotta planks and side planks! I was going to put in an ab DVD, but I was too busy watching the Real World (gotta say, I’m not too impressed with this cast.)

I just did my usual butt-boosting work out for legs and glutes. Then, I finished it off with an easy 35 minutes on the elliptical.

It was a nice Monday workout for me! I take Monday workouts a little easy because usually my long runs are on Sunday. How are your workouts on Monday? Back to the grind and all out? Or do you ease back in to it like I do?

Niko’s New Do’

Niko’s sportin’ her new summer do’ now. They almost buzzed her! She still looks cute as cake though, and I think she likes it better. It’s much more apropriate for summer. It almost makes her look like a little kindergartner with a bob on the first day of school! (Insert jokes here, I know I’m a crazy Niko mom)

So, bunco was a lot of fun last night! And the hostess brought a wonderful variety of food. She brought some veggies and hummus over, and I think I alone ate half the tub! woops…
Unfortunately I didn’t win any money, but hey, what’s new :-p Those girls crack me up. I love em all, and I’m so lucky to have them as my friends!

When I got home, it was pretty late, so I didn’t feel like fixing up a plate of the crock pot dinner, so I just watched some triple D and went to bed. Naturally, this morning I woke up starved! I usually don’t eat before I run in the morning, but today I figured it would help get me through it. A banana and almond butter should do the trick.

It did! I’ll probably have another attempt at a smoothie when I get back. Today’s long run today. For me, long run day consists of 4.5 miles. Yipes! I’m still trying to decide if I should run inside or outside though. They’re predicting rain, but the rain hasn’t started yet. Plus, I haven’t been to my gym since Wednesday! All of my workouts have been outside on the pavement or in my own home with weights and elliptical.
