Fall Means to Me…

Hey guys! How’s your Monday shaping up for ya? 🙂

So it sounds like we’re all omelet eaters when it comes to eating breakfast out. It’s funny because at home I almost always eat a sweet breakfast (waffles, oatmeal, cereal, etc) but when out, it’s omelet time!!

I’m at the gym working away, but I thought I’d throw in a post for some afternoon reading 🙂

I’ve always been known to say my favorite season is summer, and the rest all pale in comparison. But really, guys, I’m realizing just how awesome fall really is.

I know it’s a super short season.

And it means winter is coming.

And the fall colors are just there because stuff is…dying.

But it’s also one of the prettiest, most nostalgic and wonderful times of the year.


And it’s the best weather for…

going Frisbee golfing on a Sunday afternoon:



Biking down the trail…



…to a local pub for some FOOTBALL:


and the obligatory beer that goes along with it 😉


And last but not least, comfort food:



Yesterday after taking a long bike ride on the trail, I came home and wanted something soothing for the soul.

Can anyone tell me a dish more soul soothing than macaroni and cheese, please? Didn’t think so. And none of that blue box stuff (though it is mighty tasty…)




So I cooked up a box whole wheat elbow noodles – and snuck in some veggies in the form of cauliflower 😉



then warmed up the three dairies (1.5 c. cheddar, 1 c. manchengo, and 1 c. Greek yogurt)

And combined them to make one super duper comfy meal:


Simple, no? Delicious, no? 😉

This makes WAY more than one serving by the way – probably more like 5 or 6? That bowl is HUGE.


Back to work I go…

What a week! I think I deserve a




Last night after working the third day at the BIC & training clients, I did just that. It was the last (pumpkin) beer in the fridge (thankfully) I can’t wait to pick our and try out another this weekend!

For dinner last night, all I wanted was a bunch of:




I hadn’t had hardly any veggies all day (besides what was mixed in my black bean burger for lunch) and the craving was something:

The veggie craving was squashed after roasting and was eaten along side some almond butter encrusted sweet potato (yam?) fries!

Leaning Tower of Libby’s

Hooray! I haven’t been able to find any Libby’s pumpkin this year until this weekend. This surprised me because I only live 25 minutes away from Libby’s Farm! In fact, I ran in a 10k last year that was sponsored by Libby’s 😀

Hey….what’s that doing there?!


I also had the first pumpkin beer of the season:)

This was REALLY good! Could have been a tad more pumpkin-y, but yummy nonetheless:)

Naturally, I wanted to dig into the canned pumpkin ASAP. It got its debut in breakfast form.


I made a usual batch of oats, but the star was this topping:


1/4 c. pumpkin + 1/4 c. plain Oikos Greek yogurt + 5 drops of vanilla stevia



However, there was a dilemma. I still had half a can of pumpkin to use up (shhh I know I keeps in the fridge for a few days.)

Solution? Matt’s Vegan Pumpkin Bread!




This (VEGAN) is amazing!!! I followed Matt’s recipe except for I didn’t have any applesauce – so I subbed it for 1/2 c. more of pumpkin. It worked wonderfully.


It made two loaves, one of which I planned to give away, but now I’m not so sure 😉

Nevertheless, we still have a situation on our hands, as this recipe called for the rest of the can of pumpkin and then some.


I know what today’s breakfast will be 😉


Have you had a taste of fall yet this year? I was trying to hold out until the end of September, but I couldn’t resist!

Alcohol and Athletes


I’m pretty beat. Tuesdays and Thursdays are my ultra long days, and from running at 5 in the morning yesterday to training until dark, I was one tired chica. Today, however, I only have to attend one of my part time gigs (Hi, BIC 🙂 ) and then I’m doing something I haven’t been able to do since I broke up with my gym. I’m excited, and I’ll write more about it after the class (any guesses?)

The other day, (Labor Day) the husband suggested we cook out. You all know I love grilling out, but the only thing I had to grill out was a chick’n boca burger, and that just didn’t sound good. What’s a girl to do?

Well, if you read Mama Pea’s blog, you may know the answer to this question…




Guys. If you are looking for a good veggie burger recipe, this is it. I took one bite, and told Shane, “I don’t think I should be eating this…I’m vegetarian!” It’s been about a year since I’ve had a real burger, but this tasted SO burger-like. It was almost eerie. But a delicious eerie 😉


With it, roasted okra + sourdough garlic bread.




A perfect late summer’s meal.

Pre-dinner, we lined our stomach with homemade pico and guac w/ some tortilla chips

Alcohol and Athletics

I don’t keep it a secret on the blog that I enjoy a few cocktails from time to time…


Sometmes beer



Mostly wine




Every now and then, a mixed drink with a girlfriend.


But gone are the days in my unhealthy ways when I would drink to the point of extreme drunkenness. I just don’t care for the feeling the day afterward…or really the feeling that night anymore for that matter!

Being an athlete, (sure, I’ll consider myself an athlete) there are several things to consider in regards to partaking in the occasional adult beverage or two. After each workout, the body needs to recover. When one drinks several alcoholic beverages per week, it’s inevitably factored into muscle repair and recovery.

Consider this:

  • Drinking alcohol, especially when it carries into the late night, disrupts sleep. Sleep in key in workout recovery.
  • Alcohol is absorbed directly from the stomach into the bloodstream within 5 minutes after consumption.
  • Although alcohol is a fluid, it’s also a diuretic. The more you consume, the more fluids you lose. Have at least one glass of water for every alcoholic beverage you drink.

After those three points considered, if you still drink to the point of having a hangover, here are a few points to consider about hangovers:

  • Hangovers are mostly due to dehydration and loss of electrolytes.
  • To lessen the hangover’s effects, drink water and beverages with sodium – gatorade, broth, soup.
  • Hangovers generally take 12 hours (or more) to pass.


So do you have to abstain from alcohol completely for your body to recover during training? No! Is your body going to recover and repair more quickly when drinks are not consumed in excess? Heck yes!

With that said, cheers to moderation, solid recovery, and fun!

Gooood morning!

As my alarm went off at 5:45 this morning, the husband called in to me, “Sorry, babe, but it’s pouring again outside.” Ugh, pouring again?! To which I replied, “that’s OK…it’s not pouring under my hat and plastic baggie!”

And so I set out on my 5 mile run, hat and plastic bag in tote. The hat was for me, the bag for my electronics (iPod, Garmin, iPhone.) Fortunately, the rain had slowed to a sprinkle, and I returned from my run only half wet from the rain (the other half, from sweat.)

I took it easy since I ran a fairly difficult 4 mile tempo run less than 13 hours prior and ran the 5 miles with an average pace of 9:27 (wedding date!)


Bloomington/Normal isn’t what I’d call a big city. Especially when being compared to a weekend spent in Chicago, Bloomington/Normal is nothing to write home about. Now, compare it to my hometown of 35,000 and we have a different story.

That said, whenever there’s any time of ‘fest or festival in town, I’m there.

This past weekend Shane and I went to Bruegala – Bloomington/Normal’s annual Beer Fest.


sidenote: The woman holding that beer is on the news show Shane and I watch every morning! I didn’t even realize it until after taking the picture LOL

I was pretty impressed! There had to have been more than 30 different breweries featuring their brews



We didn’t even try half.

And there were many more local  and home breweries than I anticipated!

However, we bought FAR too many tickets. We ended up leaving a stack on a table for some lucky drunk fest-goer 🙂

There was also a concert going on out back for people to jam out to after sampling some brew-ha-has


We didn’t stick around to see if those hookahs were used…

I think I found my pumpkin beer!!


There were actually two that I liked – one tasted like pumpkin, and one like pumpkin spice. Completely different tastes, but definitely both pumpkin.

We had a great time…but I actually wished they didn’t fill up the glasses as much! I wanted to sample many more beers, but I also wanted to walk back to the car, not crawl. By the end, it occurred to me that I could, in fact, just ask for half a glass 😉

Afterward, we soaked up the beer with some Mexican from our favorite Mexican restaurant.

What’s your favorite beer? I love me some Sam Adam’s Cherry Wheat, but I also tried a Sam Adam’s Blackberry beer at the fest that was fantastic. I’m a big Blue Moon fan too. I guess I like fruity beers? But I also love Amstel Light.

You Know You’re in the Midwest When…

Hello there!

Having a good weekend thus far? Whatcha been up to?

So yesterday as I was beginning to leave for my run (I had decided to run on the treadmill vs. going outside iPodless) I found my iPOD!!! It was in the depths of my purse. Yeah…the husband definitely gave me a hard time about that one after helping me search for a good hour. I told him I found it under the fridge 😉 He didn’t believe me. Haha

Anyway, after watching an hour and 15 minutes of flip this house, I decided to call the run quits at mile 8. I was just over it. Plain and simple. It was still a good run, and I was a complete and utter sweaty mess.

I came home with a voracious appetite for fresh veggies!


Green (protein) monsters are pretty much the best post-workout fuelage ever. This one contained 1 frozen banana, water (out of almond milk,) ice, maca, Vega Vanilla Almondilla protein powder, and of course – spinach.

But I didn’t stop there. I had an entire container of brusells sprouts in the fridge, and I roasted them all.


Just a little EVOO, sea salt and pepper, roasted at º425 for 12 minutes, flipping after 6…I only got about 3/4’s through, but it quenched my veggie craving thirst.

Yesterday was one of my client’s birthdays, so I grabbed Shane and we met up at the Sugar Creek Arts festival uptown. I’d never been, but it was huge!

I tried to put my “don’t mess with this” face on. FAIL.

It was pretty sweltering, so after we bought a couple keepsakes and gifts, we said goodbye to my client friend and headed home.

Walking around looking at art works up an appetite! Back home, I fixed up a snack.


The Greek yogurt + honey + berries combo is a no-fail snack in my book.


The hubski left me to go hang with the guys, so I took it as a sign to relax in bed with my book:


The Hills, and a self-pedicure.

Later, my parents came over so we could go out for Indian food! My dad’s hooked on Chicken Tikka Masala (or as he says, ticka mersala with nana bread LOL) and I of course love the Yellow Dal and nan.


I also got a really good Indian beer!


We stopped by Friar Tuck after because what’s more fun than going to a store that has more brands of wine than Carrot Top has had plastic surgeries?

We picked up some pinot noir to share a glass before they headed home.


I’ve been drinking pinot grigio lately (it’s a summer fave,) but pinot noir has my heart.





This bottle did not disappoint, either!

Well I’m off for a hilly four mile run before training a few clients. Hope you all have a lovely and relaxing Sunday! 😀

Separation Anxiety


After my speedy four miler yesterday morning, I had a hankering for some hot oats. But now oats in a bowl…


It was worth every sweat bead that hot oats after a hot summer run like this produces.



Then I got ready and zipped off to the office for a bit. Around mid morning, I decided I’d take a long lunch, so I came back home and took advantage of the glorious day by taking Niko for another quick stroll.

Lunch was a wrap! Quick and easy always does the trick.

I really miss the pets now that I’m gone during the day again. It was really hard to leave and come back to work. Is it uber pathetic to have separation anxiety from your pets?!
I even ate lunch with Niko on the bed!

Then I went back to work for the afternoon to learn about the job of who I’m replacing. Fun schtuff.

Last night was volleyball night, but it was a late-ish one, so I had a couple hours to get some work done and relax beforehand.

I completely thought I was pouring Mary’s Sticks and Twigs on my chili, when I noticed that it wasn’t sticks and twigs at all, but Eden’s Blue Hot chips! And ya know what? Eden’s Blue Hot chips make a darn good chili topper!


Lacking in the veg department, but I don’t see any veggie police around…

I had another beer after while playing volleyball (we won! And my mad skillz are back!) and then came home for a snack before bed:
