Keepin’ it Cool

Morrrnin’!

How we all doin’ today? If you’re reading this, you’ve gotten through another Monday; Congrats 😀 I had a looong one yesterday that spanned from 7:30 a.m.-8:30 p.m. And today looks the exact same, but hey I’m keepin’ it cool😉

I switched it up this morning for breakfast and busted out this bad boy that’s been keepin’ it cool in the fridge all night:

Oats, chia seeds, maca, 1/2 scoop Jay Robb brown rice pp, half a banana, 1.5 T. almond butter, 1/8 c. almond milk. I added the golden raisins (obsessed!!!) this morning!

With a cup of coffee, of course.

The coffee was leftover from earlier this morning. I’ve convinced myself that I NEED a cup of it before my morning workout. So when the alarm went off at 4:50 this morning, I made some French Press, poured it in the to-go cup, and chugged sipped it on my 5 minute drive to the gym. I was running a little late this morning, and only had 50 minutes at the gym, so my coffee was still warm when I got back to my car:)

At the (uberly hot and humid) gym, I did running intervals! I was too asleep to make it anything too specific, but I basically jogged at 6.1 for 90 seconds, then ran at 6.6-6.7 for 90 seconds, until 45 minutes was up. The end! Hoping to get a lower body workout in between clients tonight:D

Usually works every time. Not this time. I tossed and turned for an hour or so! At least when I did get to sleep, I slept like a rock! Gotta love that:D

Are you a member of your gym? Has it gotten unbearable hot and humid in it the last few days? I know it’s only April, but it’s SO warm and sticky outside (which is fine) and inside the gym (which is not fine.) I needed double the water I had!

Jillian Michaels in My House and Giveaway Winner

Happy Friday!! Weee!!! This week has flown by, for me, like they all have lately. Either way, I’m thankful the weekend is here, and that I only have to be at work until 10:30 today.

Last night I was on my way home from work, and noticed the aphids/plant lice were still in full force. That meant my planned outdoor run got ixnayed. I also forgot to bring my iPod in my work out bag (which I packed just in case the buggies were out) so that meant treadmill workout got ixnayed as well. As I told Taylor last night on Twitter, a treadmill workout =sucky, but a tunless treadmill workout=just not happening!

So I ended up using the workout room at my casa instead!


I’ve never busted a sweat with the Jillian Michaels before, so I decided last night was a great time as ever to take advantage of her 30Day Shred workout that is being featured On Demand.

Niko was super excited to try it out with me!


…but then Jillian scared her and she quit 😦

Likes:

  • Jillian’s no-fuss, no-frills attitide. I loved that her workout outfit was a simple sweats and non matching sports bra.
  • The length. I was hungry, and had eggplant parm in the oven, ok? 😉
  • The strength moves. I loved how much she switched it up, but still worked the muscle groups to the max

Dislikes:

  • The cardio portion. I’m not a huge fan of jumping jacks or jump rope. But to each their own

Overall it was a great workout, and gave me a break from running and the elliptical. Oh, and I did level one. I would definitely do level two sometime soon!

After getting my ass kicked by working out with Jillian, and was ready to dig in to said Eggplant Parmesan.


Mmmm. Shane’s side has the extra cheddar cheese.


For some extra greens, I added a very bland side salad of just spinach and Annie’s Goddess Dressing.

And for some extra fun, I added a glass of wine 😉 Unpictured, because it was a weird bottle, and I had to have Shane open it for me. Heh.

So this weekend’s plans include the hubski and my ONE YEAR ANNIVERSARY!!! YAY 😀 I’m not sure what all it entails, but he’s up to his romantic tricks, and has a surprise planned. We’re also going to watch out DVD from when we got married on the beach!! We haven’t watched it yet, and have been saving it for our anniversary. And no, we didn’t save our wedding cake. Mostly because we got married on the beach in Florida and live in Illinois. Hello, yucky cake.

We’re also going to the Walk for The Mind in Peoria for those with brain cancer and most importantly, my beautiful and awesome cousin, Beth!

Eggplant Parmesan and a New Hair Color

(Possible a new hair color…read on)

Good morning! I can’t believe it’s Thursday already!!! That’s awesome in my book. So, before I tell you about my night last night, I wanted to get some opinions from you. I’m getting my hair done tomorrow, and I think I want to add more of my natural color (which is more of a strawberry blonde opposed to the brighter, lighter blonde it is now.)

I’m thinking of going a little redder, and darker. You know, fitting for the season change. I know it’s hard to tell by one picture, but, do you think this will be a good change? Do you have any examples I can look at of celebs or other people’s pictures whose hair is reddish/strawberry blondish?

OK, so last night was actually nothing to write home about. I had big plans of doing yoga and laundry, alas, neither of them got done.

This did, though!

Anyone heard of that brand? It’s great!

Eggplant Parmesan!

With fresh sliced mozzerlla layered in between.


On the side, I heated up some frozen veggies, and toasted the last of our Great Harvest Bread Co. bread. And I added cheddar cheese to Shane’s side. It turned out scrumptious, and I’m definitely taking advantage of the leftovers tonight!

Really that’s all there is to report of last night. I didn’t finish anymore of my book, but I did get to watch some Good Eats with the hubski!

Today should be good at work. I (finally!) have no meetings, plus a lunch out!! I think I’ll bring my iPod and get some serious desk work done. However, tomorrow on my half day, I have three meetings! HOW did that happen?! I try to keep that day free. OH well.

Eggplant Pamesana

SUCCESS! It’s pretty hard to screw up eggplant, though. This is definitely one of the favorite dishes I make.

You should make it too! It’s easy peasy.

  • preheat the oven to 350, then slice up an eggplant into 1/4 of inch thick rounds

  • dip them in an egg wash, fry them in non stick cooking spray on medium

  • spread half the slices in a square pan, then pour a little marinara over each of the slices, and layer with goat cheese, parmesan, mozzarella, and cheddar (or really whatever you have a hankering for!)



  • Next, layer the other half of slices on top, and repeat with the sauce and cheese.

  • Pop in the oven for 25 minutes, and take out your delicious dinner!

I needed something sweet, so I had half a box a few of Annie’s Bunny Grahams:


After consuming this meal, I noticed that I didn’t have one “meat meal” today. I’ve experimented with vegetarianism before, but have always gone back to meat because it made my body do weird things. For example, the first time I switched back to eating meats is because I noticed my hair was shedding a heck of a lot more than normal. I’m not sure if this had to do with not eating meat, but when I went back to meat, it stopped.

After my second trip to vegetarianism, I noticed I was getting canker sores in my mouth a lot, so I switched back. Again, never could find the answer to if the two were a causal correlation, but it stopped when I switched back.

Perhaps I just wasn’t getting enough protein. Maybe now that I’m more educated about ways vegetarians can get enough protein I’ll try again some day. For example, now I eat the crap out of all kinds of nut butters, and I know more about tofu from reading veggies’ blogs, and I know certain grains seeds contain protein that I didn’t know about before entering the blog world.

I’m such an animal lover, which is why I tried going meatless the first two times. Now I suppose I’m in denial whenever I’m eating meat products. I just try not to think about it. I really have a hard time eating meat that you can obviously tell where who it came from. For now, I’ll continue being a omnivore, but I have a feeling I’ll try the vegetarian route again some day.
