The other day when I had a couple free hours to spare I meandered on out to the local Border’s. I’ve been waiting for this to happen for quite some time. You see, every now and then I like to use my free time to peruse the shelves at Borders, taking in the smell of new books and the sights of a plethora of words between pages.

I went in and started accumulating quite a stack in my arms. Two different genres for each arm – fitness and food.

Ellie Kreiger left with me:



Ellie’s books are basically a dream cookbook for a vegetarian and a meat-eater living together, eating at the same table each night.


This is because basically any of her dishes can quite easily be made vegetarian, and vice versa.


I bought her other cookbook about a year ago, and some of my staple meals are made from it:

Her newer cookbook, called So Easy (which is PERFECT for me) came to fruition last night in the kitchen. I got home a little later than “ideal dinner time” last night and had my eye on a certain recipe – Quesadillas!


This recipe called for a filling mixture of mushrooms, onions, garlic and spinach and some spices. It also called for chicken. But I simply added black beans instead! Then at the end, I added Shane’s chicken to his tortillas only.

While we were grilling, chopping, and cooking, we drank!


And ate!


And then after getting the tortillas nice and brown, it was time to dig in!

These were SO delicious. And SO EASY 😉

Shot Blocks for Lunch

What up Bloggy friends? Hooray for Saturday! Got any fun plans? Any relaxing plans? I’m supah excited, because after I finish this post, I have to get ready, and then go meet a few girlfriends at the gym for group fitness extravaganza! At one of the gyms in my city, they had a “week of free fitness” where they allowed any one of the public to sign up free for just one week (which is awesome, in my opinion.) Today is kinda the last day celebration, where they are having back to back classes for hours on end. My girlfriends and I decided to do back to back spinning and then zumba. I hardly ever go to either of those classes at my gym, so I’m very pumped to go today:D

Anywho, yesterday when I got off of work, I went grocery shopping. This is completely normal and pretty much my routine. However, they way I went grocery shopping changed. I’ll usually hit up Fresh Market, spend more than I need to, then go to Naturally Yours to get the other ingredients FM didn’t have, and spend more than I need to. Well, I came up with a plan to save as much as I can, and one of them is a grocery store haul. So my route went a little something like this: Aldi’s to get what I could there, then to Wal-Mart, to get what I couldn’t get at Aldi’s, and only then did I go to Naturally Yours to get the specialty items Wal-Mary doesn’t carry (think kombucha, spelt flour, shelf stable tofu, etc.) The plan worked out wonderfully, and I don’t think I’ve gotten more bang for my buck since gas was a dollar!

Plan was to run after a snackie. Snackie:




Apple and almond butter deliciousness. Then I headed out for my run. I switched up the plan last minute, and decided to do my long run then, to get it out of the way. Well, my body let me know right away that wasn’t a great idea. So I cut it down to 5 miles. And they were a very hard 5 miles. I think this very mild sickness I had just made my body heat up way fast, and I just was achy. I could have kicked myself, too, because it was SUCH a beautiful day. 60 degrees, sunny, but very, very windy. I fought the whole run to make it. In fact, I was extremely surprised to look down at the G-baby (Garmin) and see I was running at 10.00. It felt like I was even slower than that!

But I got back to the house after about 48 minutes, and stretched a little. Then I punched in the garage key to get back inside. Nothing. Tried it again. Nada. Oh crap. Once more? No luck. Oh dear…by now even though it was 60 degrees, my body was getting cold from sweating. And it is windy out by my house. I didn’t have my phone or my key, so I ran to the back of the yard where we have our fence so I could block some of the wind. I didn’t want to freak out or get mad, so I did some strength moves using what I had:


  • 2 sets of 12 tricep dips on the steps
  • 2 sets of 10 pushups
  • v-sit for 30 seconds – twice
  • planks
  • 2 sets of 12 squats
  • 2 sets of 15 calf raises on the steps

That took about 30 minutes. My garmin said it was now 2:10. Hm. Shane doesn’t get home from work until 3:15-3:30. Now what. I’m freezing. Need to distract myself. So I messed with Niko through the slider door. She couldn’t for the life of her fathom why I was on the other side of the glass. Now I know how she feels when she’s waiting to get let back inside LOL. So I decide to just lay down on the step for a while, until I realize I’m now starving.

Enter lunch:


I had brought some Clif Shot blocks with me since I thought I was going to be running 8 miles to begin with. Luckily, I packed them in my Tupperware water bottle that has a compartment for stuff like this on the bottom:



Pretty cool, huh? Lunch was very yummy…err…something like that.

Finally, I saw Shane’s car drive down the street to our house. MY SAVIOR!!!! When I saw him come in, I banged on the glass door, and he rescued me. Haha…sounds pretty traumatic right? 😉 I’m such a baby.

When I got inside, I made myself a real lunch by grilling up a veggie panini:


Mmm. Tomato, cucumber, spinach, portabella, and a laughing cow cheese wedge. Warm, crispy, heaven in my mouth. After recovering, I gave Shane one of his birthday presents, since it is, afterall, his birthday weekend. He then spent the next 4 hours with it:



After getting bored around 10 minutes after watching, I spent the next four hours making birthday (and regular ol’) goodies. See, I was supposed to be doing this, and have it ready for him when he got home, instead of spending quality time with the back yard.


Leslie’s Bad but Good Bars, from ‘>Eat, Drink, and Be Vegan:

If you were wondering how good these bars are, wonder no more. They’re foodgasmic. Oh my deliciousness were they tasty! And very healthy! I’m not sure where she gets the “bad” part of the name in any sense.

Next up were Super Charge Me! Cookies from EDBV. My parents are coming over Sunday to take Shane and I out to dinner for his birthday, and my dad loves  these cookies.  I just hope I didn’t ruin them. Instead of adding 1.5 T of vanilla extract, I added 1 T of vanilla, and .5 of almond. The sample I tasted was good, but I hope RAN dad still likes ‘em.



And finally, were the Triple Chocolate chip Cookies from Ellie K’s ‘>Food You Crave . These were per the birthday boy’s request. And obviously I did not oblige.




They turned out perfectly. I really don’t think I’ve done better job baking cookies. I’m getting better!!

After all of the cookies cooled, I packaged them up for everyone who visits up this weekend to enjoy:)


C’mon, what’s better than a cookie pyramid?! Beer pyramids are pretty damn awesome, but I think cookie pyramids take the cake cookie.

And since I had the food processor out for the tofu for the topping of the Bad but Good bars, I decided to use up the tofu that was leftover for some edamame hummus:


I can’t get enough of this stuff. SO good with Stacy’s multigrain chips. I barely had enough energy to make dinner, so I went the easy route and ate leftovers. Again.




Veggies from leftover lunch’s panini with a dollop of Sabra’s hummus. And leftover whole wheat spaghetti with sun dried tomato pesto:




After devouring some grub, it was movie time. The choices:




We went with Food, Inc, after several promises to Shane that I wouldn’t let me be sad the whole night. When am I going to learn to only make promises I can keep? I’ll save my thoughts for another post, because this one is approaching novel status already, but I’ll tell you that tears were definitely shed, and the movie was almost turned off twice. I’m disgusted. And it reinforces my decision to become a vegetarian.

Football, Wine, Steak tacos=Sunday Funday!

Hey all! I hope your weekend left you feeling rested and rejuvenated! Thanks to my Sunday, I can say, “yes, yes it did!”

The whole day was pretty relaxing. Unfortunately, my ankle is giving me trouble still. I’m afraid that even my new running shoes can’t stop the pain. Actually..I’m really, really scared that I might have already caused it too much damage. Not to mention, I have my first 10K on Saturday. Yikes… Needless to say, yesterday was a rest day. “Movement” included taking Niko for a walk and cleaning a wee bit. Oh, I forgot one other movement I did yesterday – the main movement! Cooking!

Lunch was pretty freakin’ awesome. My asparagus was about to go bad soon, so I drizzeled some olive oil over it, then wrapped some smoked turkey around it, and popped it in the oven for 12 minutes.

Fantastic, my friends. Fantastic AND easy!

To go along with it, I made some edamame hummus!

Then I topped with some edamame beans and stuffed face!

Twas quite the delicious lunch. And it is courtesy of Ellie Kreiger – it’s a new recipe from my new cookbook!! You all should get this book if you like to cook; the recipes are phenomenal!

Afterward, I piddled around the house for a few hours (piddling included reading for an hour outside, going to Fresh Market – yes, again – and playing with the pup.)

Clarabelle thought she could take Niko for a walk until she realized she needed thumbs to do that!

Then it was time for the Bear’s game!!!! wine, and steak tacos 😀

This is a great pinot – soo smooth.

For the steak tacos, I just grilled some flank steaks from Fresh Market on the stove (I’d have had Shane man the grill, but he was busy alllll day working on cars)

and then carved them into thin slices when done. Then I heated up some corn tortillas, and topped them off with this salsa:

Mmmm. It was just a diced avocado, a diced 1/2 english cucumber, diced red onion, diced jalepeno, and the juice of 1 lime! It topped off the steak perfectly. Can you guess where this recipe came from? 😉 Yep, my girl, Ellie.

I had two. They almost knocked my head off.

I’ve never made steak tacos before. I guess it kind of scared me, since whenever we have steak, Shane cooks it on the grill. However, these were delectable and easier than I ever imagined.

Things I’m looking forward to today:

  • Getting a massage! My friend, Trina, recently got her license in massage therapy, and is giving my a 60 minute massage right after work! woo hoo!!!
  • Gossip Girl and One Tree Hill premier tonight! I’m way too excited for this, LOL
  • Making a new recipe out of aforementioned cookbook yet again for dinner tonight

My First Zumba Experience!

Hi guys! Wow what a jam packed Friday! And it as even my half day today at work! It was jam-packed with fun-ness though:D
After work I decided Niko needed a little spiffing up, so I took her to the groomers. Poor little girl was shaking like a leaf 😦 No matter which groomer I bring her to, it seems like they never treat her well enough. Then again, no one’s good enough for my little Nikster 😉 I came to get her a little early and they were just finishing up.

AWWWWWW. Daddy was sure to have the bows out in no time 😉 He wants Niko to be a tom-boy, haha.

While she was getting prettified, I was out spending teh moneyz. First I just had to go to the Naturally Yours health food store to use my newly realized employee discount. But that only took up about 30 minutes. So I headed into Borders and looked at a couple cook books:

I have an obsession with Alton, and I really want this book in the future. I like him so much I left an Operation Beautiful note in it, and then left it out on a table in hopes that someone would open it up and see it today:

Then…I did it! I bought the cook book I’ve been wanting for-ev-er!

I was going to wait, and get it on Amazon for cheaper than $28, but I managed to sweet talk the cashier into giving me a 30% discount 😉 Score!! I think it was my karma payback from leaving an OB note, heheh
Naturally, I went next door to Fresh Market to pick up ingredients for two meals I want to make from the book this weekend. And I did what I said I wouldn’t do yesterday:

I bought over-priced produce from FM. But it was all organic!! I also found another unicorn!

I had actually gotten in line, having given up on finding them, and then I spotted them in the lady ahead of me in line’s cart. Obviously, I said, “Where did you find those Flat Out wraps?!” She then pointed me in the right direction, and I got out of line to grab them up. Can’t wait to try ’em!

I love that all their meat is all-natural or organic. Buying sketchie meat makes me nervous.
After a short nap, it was time to ZUMBA it up!!! I met my friend at the gym and there were SO many people that attended. The energy was awesome, and the cause was even better. They had raised so much money for Ovarian Cancer before I left – and there was still an hour to go then!
I zumba’d for about an hour before I had to go. Honestly, I wasn’t prepared for it to be such a work out! I wore my Polar F6 HRM just because I was curious, and let me tell you, zumba burns some serious calories when you get into it! I think it said I had burned about 390 in 45 minutes? I’m not quite sure..but it was up there. They had all of their instructors take turns, too, so it was neat seeing all of their personalities. I really liked the ones who got into the most and looked like they were having a blast. It pumped me up!

Then it was off to BUNCO, where I brought the aforementioned birthday cookies. No, unfortunately I can’t say I made them (I wish I did!!) I bought them from a local bakery that is famous in this town for its sweets – Grove Street Bakery.
Bunco was a ball as usual. The group of girls I play with are simply great. And good news!! I won money!! Ten dollas, baby! I haven’t won yet in 2009, so maybe it’ll be a winning streak 😉 It’s $5 to play, so I won $5 for the most “baby buncos.” If you have never played bunco, you should seriously get a group together to play! Has anyone never heard of it?

And after ALL of that stuff, this post also serves as a Race Eve post. Yep, tomorrow morning I’m running a 5K! And it’s in a city 45 minutes way at 8:00 a.m. I forsee a nap in my future tomorrow. Ok…must go to bed. Good night, all 😀
