Consoling Enchiladas and Rest ‘Weeks’

Another sad moment for this statistics queen, my volleyball team received its first big “L” of the season last night.

We had a disadvantage of only playing with 5 players, but the other team was down right GOOD. I may or may not have left with the imprint of a volleyball on my chest. Erm, yeah…

It’s OK though – I drowned my sorrows in some enchiladas!!

I swear they’re not eggs. I just went a little overboard with the cheddar jack 😉

I based it on this recipe, but made two different batches. I switched it up big time though. I also made them vegetarian – and used just mushrooms, garlic, tomatoes, and cauliflower as the vegetable base. Then at the very end, I added black beans and lentils to the mixture.

Must. Use. This. Mixture again. If you guys are interested, I can post what I did and used exactly, because I switched it up pretty big time from the recipe.

I love refried beans, but whenever I make them from a can, they remind me WAY too much of Clarabelle’s wet food. Then I automatically think they taste bad too :-/

It’s been quite a while since we’ve had an enchilada night! They’re so easy to make and great to prepare in advance, too. For example, today I had a client around 4:00, so I made the innards and stuffed the tortillas, “made their beds,” and packed ‘em away in the fridge. Then Shane just stuck them in the oven about 20 minutes before he knew I’d get home at 375 degrees.

It’s been a bit of a sweet tooth round these parts lately with all the baking and birthday goodies, so no dessert for me afterward. I’m going to attempt to go light on the sugar this week. We’ll see how that turns out 😉

Time to go get ready for that place called work! I skipped my workout today because I figured my body needs a rest – even though I took a day off a couple days ago. I’ve actually been planning to have a week that consists of more rest days than workout days soon. In my opinion, ever now and then (maybe once every three months) the body needs a rest week – not just a rest day – for various reasons. Anyone else out there follow this notion?

Home Cookin’ on the Go

Yes, I’m well aware the title of this post could pose as an oxy-moron. However, this post serves to prove that false!

As I mentioned in yesterday morning’s post, Tuesday was a marathon of a day. I worked 8 hours at the BIC, came home, shoveled food into my mouth, and went to the gym to train some clients while also getting in a workout myself. I was home by 9:00 pm, but I still managed to have a home cooked dinner on the table.

Not a granola bar or frozen meal – homemade veggie enchiladas!

No, I didn’t create the ever-so-lusted-after 25th hour; I planned ahead! Monday was my easy day this week; all I had on the agenda was to train a couple clients and do some tax stuff for the LLC. So with my extra hours, I helped myself out in the form of prep-work.

I had all the fixin’s for veggie enchiladas, but we had plans to go out for Indian food that night, I simply prepared them to be cooked tonight instead.

This ensures there will be leftovers to freeze and pull out  in the future on a night where I wasn’t so adequately prepared – hey, those nights happen too.

While slicing up the veggies, I practiced another time-saving tip by slicing a few extra to include in today’s sack lunch:

For Shane’s, I used Jenna’s method of poaching some free-range chicken (breasts) and shredded the chicken to include in his tortillas. It was so quick and easy!

Before heading into the gym last night, I just pulled them out of the fridge, shredded some raw jack cheddar on top, preheated the oven to 400, popped the pans into the oven for about 10 minutes, and voila! A home cooked dinner in 10 minutes:

Another time-saving measure I did on Monday was deep cleaned the entire house. If I set aside two free hours to get the floors, counters, bathrooms, and laundry done, then it doesn’t pile up and get gross during the days I’m busy. Not to mention, tasks lists and Google Calendar save my life. Call me type A, but I just can’t stand feeling rushed and disorganized – it seriously sets a bad tone for the entire day! What’s with that?

And I’m off!! Got a majorly busy one planned again for today. Oof. However, I think I might have some leftovers to help me out with meal planning today 😉

Creative Fuel’s A-Burnin’

Mornin’! How ya feelin’ today?

At the moment, II feel…rushed? I didn’t wake up in time to get my planned 3.5 mile run in, so instead I did a quick n’ speedy 2.5 miler. I managed my time well, too:

Mile 1: (first .5 was warm up at 9:40) 9:33

Mile 2:8:28 (alternating sprints for .2 and recovery jogs for .1)

Mile 2-2.5: 7:51 😀

The weather has cooled off a bit since this weekend, which made for phenomenal running weather!

Yesterday, productivity was the name of the game. After all the weekend festivities, I had a lot of catching up to do.

My day started a bit later than typical Mondays do for me. I got to wake up an hour later than usual because I didn’t have a client this morning and I welcomed the extra sleep. Although I didn’t eat several hours before bed last night, it took a good hour for me to work up an appetite for breakfast. So I walked Niko, did some laundry, and worked on the blog. Finally, hunger set it.

whole wheat protein waffles. Switched up the topping a bit by using vanilla stevia instead of maple syrup (because we were out) and I added a half of a banana in there for good measure.

I was so full after eating this. It’s better as a post-run breakfast, since I always come back from a hard run famished. But I’ll take it;)

With fuel in belly, I went upstairs to the office to work, work, work away. My creative fire was a-burnin’ when I woke up, so I took full advantage by working on a project I’m involved in with my client-turned-business partner. It’s one that cannot get pushed to the back burner, so it’s imperative to seize the motivation to work whenever it appears. This is an example of when my to-do list gets thrown out the window. When I feel the need to write, cleaning, creating plans, and grocery shopping can get pushed to the bottom of the list.

I worked up until I headed to the gym to get back/chest workout in, and then hopped on the elliptical for about 20 minutes. I wanted to take it easy on my legs, since Sunday I both ran a tempo run and had a leg strength training sesh. The stems were a wee bit sore yesterday. After training, I had to hit up Target, the post office (Lara Bars are on there way, winners!) and a grocery store.

Now, if you’ve been a reader for a while, you know I’m not a calorie counter, but I was very surprised to see that there were 260 calories in this little bottle!! And all it is is fruit juice…craziness I tell ya.

Once home and showered, I made a real lunch:

My favorite part of working part time at the BIC? I get to make real lunches some days during the week!

Tofu marinated in tamari, vanilla stevia, EVOO, sea salt, and apple cider vinegar:

Both were roasted on the same pan at 425º, for 30 minutes, flipped half way through.

Then it was time to make the house sparkle. Even though I just scrubbed the floors last week, I had to again yesterday. Typically, I only get down on my hands and knees to scrub the floors once a month, and then once or twice a week, I’ll hit them with the Swiffer wet jet. Well, yesterday while shopping for Swiffer pad refills, I refused to buy them at nearly a dollar per pad. The Swiffer boy cot sounded like a good idea yesterday… haha Even so, nothing’s better than a good scrubbing I suppose.

After some more paper work, PT work, and taxes stuff, it was time to start dinner!

Do you make a “to-do” list? How do you organize it? I typically write it out in the order I want to get the tasks done…that way I won’t worry that I won’t have enough time to complete them and it makes it more realistic in terms of including too many tasks. But like I said, sometimes ya gotta go with how ya feel!

A Whole Lotta (Enchilada) Love

       Hey hey hey! How ya feelin’ today? I woke up in a surprisingly great mood today for a Monday! It might have had something to do with the fact that I almost got eight hours of sleep last night 😀 Went to bed around 8:30, read, and was asleep by 9:15! I used to read before bed ALL the time, and it’s a lil tradition I’d like to pick back up.

Didn’t get my long run in due to a side stitch, but I made with due, and got a nice hr and twenty minute workout in w/ some cardio and upper bod weights

Gah. So freakin’ good.

My parent’s visited for a while and we ran errands all over town before the big Saints vs. Vikings game. Holler! Saints won!

While watching the game, the husband and I played two-handed euchre and munched on some veggies.

Then had a standard Sunday night football dinner. Plus una cerveza 😀

Called it a night shortly after that!

 

Work went quite well today! I did, however, wake up with no voice, and still have no voice as I write this post. That was kind of annoying to talk to people on the phone. But not too shabby of a day all in all.

Started it out with a green monster and some over and over and overnight oats!

Love it. Half cup oats, 1 cup almond milk, 1 T brown rice syrup, 1 T chia seeds, 1 T hemp powder, 1 T. flax. On top was sliced nanner, cinnamon, TJ’s raw AB.

When I pulled in the parking lot for work I saw something black and square on the ground. In fact, I almost ran over it. Curious, when I got out of my car, I picked it up, and saw someone had dropped their iPhone! Good thing I found it, because it had been snowing, too.

I did a little stalker work, and found out who it belonged to, then returned it to its rightful owner. 😀

The rest of the day sped by! Nothing too eventful to report, but I got a lot of work done, which is always a good thing.

 

But when I left, there were some treacherous road conditions! I didn’t even know it was supposed to snow, but it was snowing sideways because of the heavy, heavy winds, which of course = blowing snow = bad roads. I even had a guy pull out in front of me and then did a 360 because of the snow/ice/slush on the ground! Of course he was in a truck. Is it just me, or do people in trucks think their vehicle is invincible in the snow? Maybe it’s an Illinois thing.

After seeing that, I took my time driving home! Today was a rest day from working out, so I just did a little mopping, some laundry, and kept up with the Kardashian.

But then…it was ENCHILADA time!!!

Using this recipe (which I found indirectly from Gina’s blog) I made veggie enchiladas for me, and chicken enchiladas for Shane!

Inside this blanket of goat cheese, enchilada sauce and Ezekiel tortilla was garlic, onion, red pepper, corn, tomatoes, and more sauce!! Plus some avocado and a side salad of spinach. So freakin’ spicy and delicious it about knocked my head off.

Well Shane just got done kicking my booty in some Wii bowling. So I think I need to go bury my sorrows in The Bachelor. Man…I really make it sound like I watch a crap ton of trashy TV on here don’t I?! Well..I do try to be honest on here, haha 😉

Are you into football this year? If so, who’s your team? Colts or Saints? I’m actual kinda anti-Colts, and I also like the Saints all right (Bear’s are my team, but Saints are second.) Either way I’m not HUGE into football, but it’s fun when it comes down to playoffs and the Super Bowl  – even if your team’s not in it!

If you’re not, what’s one of your favorite books? What are you reading now? My all time favorite is To Kill a Mocking Bird, but I picked up Lovely Bones at Borders yesterday.

Belize Me, it was Amazing!

Hey, hey, everyone! How was your Monday? Mine was actually not too bad. I took work off, just to get some things done that I needed to get done the day after I get back from vacay. It was very nice, and very needed. I could actually use another one!

Anywho, this morning I’m here to tell you all about my experience I had in Belize last week on our cruise. Did you know Belize is a third world country? I had no idea! I really wish I could have had another day here, just to learn more about the country. However, we had our excursion decided on, and we were all set to see go snorkeling in the 2nd largest coral reef.

So we jumped on yet another boat, and headed to a teensy tiny island about 15 minutes away:

The reef was HUGE and amazing. However, apparently I was MIA when they handed out flippers, so I swam barefoot. It was still amazing, but I was beat after I finally made my way to the boat when we were done. The reef was so cool, and although I didn’t see many fish or sea animals, just seeing all the different types of reef was an experience all in its own.

When we were back at the island, we had all worked up a tremendous appetite, so I convinced the hubby to share some veggie nachos and a beer with me:

After a while, we met a new friend! I just had to get my picture taken with him – his name is Buck! That was the name of my first dog (who lives at my parents’ house still)

Unfortunately, we had to book it back after hanging out on the beach to make the final departure to get back on the cruise ship. The cruise began to feel like home sweet home after a while! haha

And although we spent all day in the sun, we were still down for the deck party come night time!

Wow…just writing about the trip makes me miss it already!! Belize was great, but you gotta see what happened in Isla Roatan in Honduras. One word: Parraaadiiiiise!

Dinner a la Caribbean

We had so much wonderful, authentic, Mexican food while we were in the Caribbean, and I’m really going to miss it! So much that the dinner I made last night was 100% inspired by the wonderful Western Caribbean cruise: Enchiladas!

For Shane’s, I browned one big chicken breast in a pan, then added cumin, pepper, salt, and garlic powder, and then shredded it and set it aside:

Then I prepared the filling, using tomatoes, chiles, corn, onion, garlic, and some enchilada sauce, and one or two other spices:

When all ready, I dipped a couple Ezekiel tortillas in the sauce, and then filled em up!

For Shanes, I just added the chicken back into the filling, and then filled his corn tortillas in a baking ban.

And after letting them heat up in the oven for about 20 minutes at 330 degrees, they came out perfectly. I ate them with a side of refried vegetarian black beans and Spanish rice:

Well I’ve got some coffee upstairs waiting for me, that I’m definitely going to take advantage of this morning! It’s definitely hard waking up at 5:00 when you’re used to island time! Me needs teh coffees. But hey, at least I finally feel like I’m on land today! Alll day long yesterday I felt like I had the wobblies. My body thought it was still on the cruise ship – twas a weird feeling indeed.
