SATC Trifecta Minus One

Heyyy guys! Happy Saturday to a long weekend:)

Off to a good start? I hope so 😀

Yesterday after I trained my first client, I headed to the hills. For the first time, I’m implementing hill repeats into my training plan. Now, central Illinois is known to be pretty flat. And filled with corn, but that’s beside the point. However, there’s one street in particular that is 1.3 miles of constant rolling hills. Why not utilize this training tool? I parked my car at the beginning of the street, ran to the end, and ran back. Training run done! It was only about 2.5 miles, but it was tough, and I had a lot of other stuff to do.

After getting some groceries and some new running shoes (finally!!!) I had some post-run breakfast:


Found this little Crofter’s guy at the store, I had to try it out:


Atop some tufutti cream cheese, it was marvelous.



Now I want to try them ALL!

Excited for my newfound “free” time, I booked a hair cut in the middle of the day on a Friday. (I say free, because somehow the hours go by SO fast and I don’t get as much done as I’d like. I used to scoff at people who didn’t work f/t and said that. How dare they!)

…my hair is ALWAYS UP! And..everyone knows before shots are taken in bad lighting and with no makeup :-p

Had a green monster on the way to the salon:


While sitting in the chair talking to my stylist, something came over me. I wasn’t getting highlights, just a cut. And I wanted a change.

A big change.

Holy crap! At least this one has good lighting and I’m wearing some concealer 😉

Trying to keep my cool, I made a cold bean salad for lunch:


Pintos, blacks, edamames, chopped spinach, and portabella mushrooms, tossed in a balsamic + EVOO dressing.


Then amidst my mini hair freakout, BFF, Destiny arrived!



And as always, came with goodies:


I had to run and train a client really quick, but as soon as I got back, we drank some Trader Joe’s, pre-Sex and the City 2 wine:




And we had a moment or two:

Thinking, man, if Kim were here, the SATC trifecta would be complete. Kim is the other third to our DKP (Destiny, Kim, Paige) trifecta. Duh. Alas, she is in Afghanistan, being brave and fighting for our country. Thank you Kim! Check out her blog and journey over in Afghanistan.

After packing necessary snacks, we were off to the movies.



Chocolate covered banana chips, which I’m pretty sure we ate half of.


The movie was pretty good. I won’t spoil it for anyone, but it lived up to my expectations. I’m kinda hoping they don’t make a third one, though. No trifecta here. Not that I don’t love SATC, and not that I wouldn’t see it. I just don’t want them to ruin it. If they make a third one…why not have just kept the series going, ya know?

Back at the casa, we chowed down and drank more wine.


Plus a veggie Subway sandwich that missed the camera’s eye.

This morning, we arose and drank some coffee and ate some overnight over 20 minutes oats:

Well, I’m off to go work for a few hours, and then help the husband with our landscaping project! It’s a PERFECT day here. Low 80’s and sunny as can be! Gotta get out and enjoy it 😀

Quarter Life Changes

Heya friends! Thank you SO much for all the amazing and supportive comments on my half marathon! I was just beaming when I was reading through them. 🙂
I had the best tasting Ezekiel pizza ever tonight…

Mediterranean Ezekiel Pizza!

First I toasted the tortilla in a 400 degree oven for 5 minutes, and then spread a layer on a layer of hummus:

topped with veggies – sun dried tomatoes, kalmalata olives, capers, spinach, artichokes and then popped it back in the oven for 5 more minutes:


So it’s day two after the half marathon and I’m still feeling pretty great! My quads are definitely sore, but honestly my biggest pain point in the injury I endured when falling down the stairs getting ready for the race:


That left a mark! haha. If anything it’s a good story?

Quarter Life Changes

OK. So I’ve talked about it enough, now it’s time to finally share with you all the exciting things that have been going on in my life!

1. I signed up for a Group Fitness certification preparation class! It’s 6 classes, each 4-5 hours long between the months of June and July. I plan on getting certified and start teaching in July. I think I’d like to teach some sort of lifting class, step class, or kick boxing class.

2. I’m starting a new training plan! No…not a triathlon 😉 My first sand volleyball game is this Wednesday and I know it’s just for fun, but I want to train for the game again! I played up until my second year in college, and have missed it so. So three to four days out of the week, I’ll be working out with the husband doing plyo (we did the Insanity Fit Test this morning…holy sweat, blood, and tears.) I’ll still be running, as I have a 9 miler in June, but the focus will be mainly on being able to jump higher, get off the ground faster, and move easily in all planes of motion 🙂



3. I QUIT MY JOB at the big insurance company! I put my (three week) notice in on Friday. Training and working at the office has proved to be too much, and I’d like to dedicate more time into my training business.

IMG_5511So for the past few months, the husband and I have been making some smart financial decisions by sacrificing our lifestyle just a wee bit, cutting spending (Running Around on a Budget, anyone?) and adding to our savings. We have also worked super hard to become essentially debt free besides the cars and the house. So it’s changed the lifestyle just a wee bit, but hopefully the business will just keep growing and growing. I’ll also be starting to work staff at the gym part time. My first day doing that is this Saturday.
I’m super excited for this new journey and you guys have been nothing but supportive and hugely amazing. You instill confidence in me every day with the comments you leave and I really, really appreciate it. It just makes me absolutely value the sense of community in the blog world.


I guess I kind of consider the changes going on part of my quarter life crisis  evolvement. If I weren’t to take the risk to pursue this, I know myself and know I would regret it completely. I know I’d look back one day, probably sitting in a cubicle saying, I wonder where I’d be if I pursued my personal training business. The conditions are right for taking it: I’m young (25)  with no kids yet, financially stable, and Shane (and my family!) is incredibly supportive. Hopefully it’s the right decision 🙂


What risks have you taken in life that forced you to sacrifice something to take the risk? Besides this, the last risk I’ve taken was a couple years ago. At the end of 2008, I declined my contract at the big insurance company as my previous position (org support specialist) to get a promotion to my current position (project planner.) It wasn’t a sure deal that I’d get the job, but I wanted it so bad and worked for it so hard, that for me it was worth it. I was jobless for one week and then on the last possible day they could call me to extend the position to me, they did. I could not believe it. It’s been great working there, but there has been so many not-for-the-good changes happening this year. I won’t go into detail, because I don’t know who all reads this blog, but it got messy and just very discouraging for me. So glad I’ve found something that drives my passion.

Cuckoo for KooLoos

Hi there friends! How goes it? Celebrating the Irish?

The extent of my celebrating was wearing green and drinking this:


one beer (one’s for the husband) and it’s not even green! I just never really got into St. Patrick’s Day much for some reason. Can’t complain – I’m watching 24 right now instead of working with Quick Books. So I’m happy 😀

I finally got in a killer lower body workout this morning before work. First I did 20 minutes on the elliptical, and then did the following circuits each three times through:

one legged squats right and left 15 lb dumbbells
calf raises 15 lb dumbbells
straight leg deadlifts 15 lb dumbbells


stability ball hamstring curl body weight
plie squat 15 lb dumbbells
lunges left and right leg 10 lb dumbbells


My booty was burnin’ by the end of it, and I’m already feelin’ it now!

Breakfast was one I haven’t had in a while…some yoatgurt!


1/3 c. oat bran, 1/2 c. almond milk, 1/2 c. water, 1 banana, 1 T. flax, 1 packet of Purevia, 1 T. chia seeds on the oaty side, and 3/4 c. Greek yogurt and cinnamon on the yogey side. Plus a big blob of TJ’s raw almond butter.

Work passed by like a flash yet again today. I can’t believe tomorrow’s already Thursday! It’s been a busy week personal training, too. I’ve had to train every night this week, and it’s looking like that’s how it’s going to be the next few weeks too. I’m definitely not complaining about it, though!

For lunch, I decided to try out some of the snacks that Shelley and Shaina from Seapoint Farms sent me to sample!



KooLoos! I was super excited to try these out, because I’ve never seen them elsewhere before, and was very intrigued my the description. They’re crunchy little baked snacks of organic flaxseed and organic soybeans .


One serving of KooLoos contains Omega 3’s, 7 grams of soy protein, 20 mg of isoflavones, and three grams of fiber!

So, how do they taste?


My favorite was the original by far. I absolutely love the crunchy texture, and the slightly salty and nutty flavor. The husband tried them all too, and he prefers the honey bbq.

I haven’t seen them in stores yet, but according to Shaina, they’ll be hitting stores soon, and I could definitely see myself buying some when they’re gone 🙂


After leaving the office, I headed to the gym to train a client. It was so incredibly nice out – 60’s and sunnnny! Instead of training for the whole hour in the gym, we headed to the trail by the gym and did the first half of her workout outdoors. It was very nice for a change of pace. I think she enjoyed it too 😀 I seriously love springing ahead!!

For dinner, I had planned on having a staple Ezekiel tortilla pizza. However, while toasting the tortilla, I was also cooking sweet potatoes and chicken in the oven, and well…see for yourself:


I may have left it in the oven a tad too long 😉

It was the last one in the package, so I had to make with do.

Can’t fail with a (big as a ) house salad!


Spinach, red bell pepper, baby bella mushrooms, edamame, cucumber, quorn meatless chicken, goat cheese, and burnt Ezekiel tortilla!


With a side of sweet potato fries:) Nommy.

Sorry that my dinners have been pretty boring lately. I swear they’re all still delicious, it’s just that the amount of free time I have available has been dwindling, and well, creative and time-intensive dinners have taken the toll. It should get better fairly soon, though. Not intending to stay this busy for too much longer 😉

Now I’m about to watch some Big Bang Theory with the hubski and perhaps snack on some Annie’s Bunny Graham’s just ate probably 2.5 servings of Bunny Graham’s while uploading pictures and editing this post. Woops…

Bloom Where You Re-Pot Yourself

Hey party people! How’d you Tuesday go? Swell? Faaantastic.

Sorry for being MIA last night. I was just too pooped to blog. And I got home for the day around 8:00 p.m., and just wanted to spend a little QT with the fam.

Sounds like you all have awesome attitudes when it comes to missing a workout. No sense in fretting, right? That seems to be the consensus 🙂

Yesterday was actually a special day for me! Seven years ago on March 2nd, I met my future husband. I don’t think either of us knew it then, but now this day will always hold a special place in our hearts! Can I brag for a second? I came home to this:





I lurve him. And yes, even though we’re married now, and have a real anniversary, it’s still fun to celebrate important days in small ways 😀

Anyway, I woke up yesterday morning and per the ushe, met my girl Heidi at the gym. It was Tempo Tuesday! Did a 3.75 mile tempo run like this:

Mile 0-.5: 6.1

Mile .5-1: 6.2

Mile 1-1.5: 6.4

Mile 1.5-2: 6.5

Mile 2-3: 6.6

Mile 3-3.75: 6.3        

It was a fun run, but I don’t think I fueled properly. Instead of having my usual smushed nanner + almond butter + maca combo, I just downed half a banana, and around mile 2 I felt a little woozy and light headed. Doh!

Came back and instantly made a Green Monster after showering:


1/2 frozen nanner, 3 c. spinach, 1 scoop Amazing Grass SuperFood, 1 T. hemp protein powder, almond milk

And then after getting ready for work had a freaking amazing breakfast cookie.


Dry ingredients: 1/3 c. oats, 1 T. chia, 1 packet stevia, 1 T. flax meal, 1 T. carob powder, 1 T. protein powder; Wet ingredients smushed in: half a nanner, 1/4 c. almond milk, 1 T. raw almond butter.


Gah…perfect amount of everything!

Yesterday was a very productive day at work! Around lunch, I snuck out and FINALLY gave my car a bath across the street. It’s been needing a good cleaning for quite some time, and I got both the inside and outside done in under a half hour. So shiny 😀

I also took a quick break to run to credit union in between meetings. When I was waiting in line, when my eyes wandered upon an interesting poster. It was of a beautiful blossoming flower, and below the flower, it read this:

“Bloom Where You are Planted”

Now I can see the meaning of this quote… I guess one can interpret it as saying, no matter where you are, live up to your highest potential. However, it also says, this is where you are and where you’re gonna be, better make the best of it. It implies limitations.

That just doesn’t align with my way of thinking, clearly.

Actually, instead of using the metaphor of a beautiful flower that gets planted (which implies someone else did the planting, and it’s not even up to the flower where it gets to bloom) I’d rather be a weed! Yep, a weed. A dandelion to be exact. A dandelion starts where it was ”planted” but then moves onward and upward.

So if I were to create a waiting line poster at the bank, mine would say this:

“Bloom Where You Re-Pot Yourself”


K I better stop comparing ourselves to weeds before I scare everyone off 😉

After work I came home starving, even though I had plenty of snacks at work. Tempo and interval runs really get my appetite going:)

I had some strawberries while I started up on dinner.


On tonight’s menu…Spinach and Goat cheese “Pizza”




First I toasted an Ezekiel tortilla at 400 degrees for 5 minutes, then spread some tomato paste. Next, I chopped up some raw goat cheddar, and finally topped it with spinach leaves.

While the pizza was cooking, I also cooked some meatless balls, and when everything was done, I topped it all off with sliced meatless balls:



The result? Fan-freaking-tastic.

Then I was off to a training appointment to train a new client! This woman is a hoot! She’s so much fun, and some pretty funny stuff comes out of her mouth.

When I finally got home for the night, I went straight downstairs to join the hubski in some more 24 watching with a fine glass of wine in tote 😀 Ahhh…best part of the day right there, folks.

Today I’m doin’ it all over again! Except instead of being at the gym right now, I’m blogging and sipping on some delicious organic coffee. That’s because it’s finally warm enough to run outside after work! I’m going to get one last out door run in before the 5K on Saturday. So excited!!! 😀


Do you agree with what the poster in the lobby says? Or do you think we should find our niche, and then blossom to our fullest potential? I say find your calling. What you were meant to do on this earth, and then do the best you can do! Not to say we shouldn’t live up to our fullest potential in every thing we do, but it’s so cool to find out what your dreams are, and then just go (all out) for them 🙂

Nixing Nighttime Snacking

Hey there bloggy friends! Happy hump day 😀

I’m glad I’m not the only weirdo one who has had an emotional attachment with an inanimate object. Ya’ll feel me on having to “break up” with gyms, jobs, employees, etc. Le sigh.

Today is the first day of Lent, which is the period of “fasting” before Easter representing Jesus’ 40 day fast in the desert. Christians/Catholics who participate in Lent traditionally give up something during these 40 days as a symbol of this fast. I’m a Christian (not Catholic) but I feel like I’ve been putting my faith on the back burner a bit, and hopefully practicing this will help me put my faith higher on the priority list. Yikes…that’s the most I’ve talked about religion on the blog!

For Lent, I’m going to give of nighttime snacking. For me, nighttime snacking usually takes place about 1.5-2 hours after dinner, and is usually in the form of huge bowls of popcorn with carob chips or huge bowls of cereal and granola with coconut milk. And refills of whatever it is I’m snacking on.



Dessert isn’t off limits – as long as it’s not mindless snacking and will make me feel kinda crappy afterward. AKA a piece of dark chocolate after dinner is A-OK🙂

Did anyone else have an insanely busy day today? It was one of those days where I felt like I was unwillingly an energizer bunny. It was literally go, go, go from the ungodly hour of my waking. Care to hear about it? I thought so 😉

My alarm started yelling at me at 4:50, and about 5 minutes later, I stumbled out of bed and shoved a half of banana and Barney Butter for sustenance for my run ad weights sesh that was about to occur. That’s one thing about working out before work that’s a little difficult. It’s hard for me to eat SO early, but if I don’t, I fatigue fast. And the amount of time between waking and getting to the gym is only about 20 minutes, so there’s not much digestion time. But I work with what I’ve got, and it’s a heck of a lot better than working out after work 😀

On my training plan was a simple 3 mile run, and then some leg work. I felt great during the run. I wasn’t sure because I had such a kick-butt interval run the day before, but the leggies felt as fresh as ever! But that only lasted until I dominated them with deep squats, bowler’s lunges, plie squats, calf raises, and stability ball roll outs. Ohhh yeah 😉

When I first started running a lot last year, I noticed my “bubble but” was quickly turning into a “flat butt.” I was already a couple months into running when I kicked up my lower body strength training to fight the flatness. This race season I’m kicking it into high gear! I looove running, but I don’t want it to take my booty away 😀 But I digress…

An hour and a half later, and a quickie shower, I made a mean bowl of yoatgurt:




Oh so nasty-looking, but oh-so tasty. On the left side of the almond butter wall was the oat mixture: 1/2 c. of oats, 1/2 c. water, 1/2 c. coffee, 1/2 scoop of chocolate protein powder, 1/2 a banana, 1/2 packet of stevia. Talk about halfsies!! On the other side of the almond butter wall was homemade strained Greek yougurt with stevia and cinnamon. Swirly swirly and ya got yourself an amazing breakfast!

Got to work and realized I had forgotten about my 8:00 meeting with my boss! I only had about 15 minutes, and had just enough time to get the papers and reports I needed for the meeting together. Gah. First-thing-in-the-morning-meetings are scary. Good thing I was on time at least- and prepared in time 🙂

Work, work, work, and then it was lunchtime. Lunch was spent taking my friend Missy to pick up her pup, Arizona from the groomers. AZ looked SO cute! Missy’s car was at the shop, so I was happy to do her a favor and give me a ride. Bonus: she made me the Almond Butter cookies that’s recipe is in this month’s Clean Eating:


Wait a second…there were four in there earlier today 😉

Had some left over this for lunch when I got back to the office:



Half a baked potato with black beans which were marinated in tamari, rice vinegar, and maple syrup. NOM!

Work, work, meeting, work, meeting, and I was finally outta there (NOT on time…) and on my way home. Note: how freakin’ AWESOME is it that it’s still light out at 6:00?! I’m loving it. Took advantage of the lightness, and walked the pup up and down the street before coming home to make a delicious pizza and soup dinner:

Shane and I are on the 5th episode of 24 now, and we’re so addicted! I’m gonna get a little laundry done and then probably go watch yet another epi 😀

Blame it on the Theraflu

What up home slices? 😀

Happy Friday! Woo hoo! I feel like I’ve been waiting for this day for-ev-er! Or maybe just since Monday 😉

I woke up today feeling not much better than I did yesterday, but I made it to work since today was only a halfie. And actually, when I got to work, I downed some Theraflu, which made my mind a big haze, but also made me feel a lot better.

A nice, hot, bowl of oats wasn’t too shabby either.




Lip-smacking bowl of 1/2 c. oats, 1 c. water, 1 T flax, 1 T hemp powder, 1 T brown rice syrup, smashed ripe banana, handful of blueberries, peanut butter. Phew! That was a mouthful (pun intended ;)) And it was microwaved since I was in a pinch. Actually..I microwave my oats most of the time when their eaten on a work day. I think I’m the only one who can’t really tell much of a difference between stove-top and microwave oats.

Feeling better and better as the day went on, I decided to give the gym a go after leaving work. I hadn’t worked out since Monday, and was really craving a good sweat-inducing cardio sesh.

Hopped on the treadmill, and to my pleasant surprise, I felt pretty good! So good that I was able to run (with walk breaks here and there) four miles. Any time I felt like it was too much for the bod, I took a quick walkie break. Next was the stair master for a bit to round out the workout, and I was sweaty and feeling much better 😀


After gymin’ it, I ran some errands and popped over to a couple grocery stores. To help that be more pleasant, I gabbed away with several girlfriends while a-shoppin’. Then I was back at the casa and ready to chow down!

While grocery shopping, I had bought my all time favorite goat cheese at the Fresh Market, and knew just what I wanted to do with it. Can ya guess? 😉




Slather it on an Ezekiel Pizza!! This had goat cheese, tomato sauce, sauteed spinach, garlic, and onion. So good I wished I’da made two!



Mmmmelty melty gruyere.

On the side I had some Kale chips I made with kale, sea salt, and nutritional yeast, but my appetite was way too quick for the cam. You’ve seen it before.

Oh, and funny story – I also made the husband’s lunch, which was a grilled cheese. Yummy, melty, toasty, cheddar goodnesss…with a side of paper. This space cadet forgot to take the paper out between the cheese slices! bahah I blame it on the theraflu 😉 It clogs my mind.

Since the oven was already on full blast from the pizza and kale chips, and I still had a decent amount of energy, all the sudden lunch turned into a bake-fest!



I made Carob-Coconut-Pecan cookies, aka the best cookies evvvvah (recipe from Vive le Vegan.)




Not only do these cookies almost knock your head off, but they smell absolutely heavenly! I’ve never smelled a cookie so good.

I’m driving into my hometown tomorrow because I’m (finally) getting together with Jess to try on my bridesmaid dress (eep!!) and then getting together with some of my BFF’s for dinner and drinks 😀 So I thought I’d be kind and bake them up some yummy vegan treats.

The rest of the day included Niko walks, Jersey Shore Reunion drama, gabbin’ on the phone, and juices:



beet, celery, carrot, grapefruit, deliciousness….tie dyed style.

As far as the rest of the night goes, it looks like I’ll be staying in and relaxing. The husband just put in Valkyrie, and it looks like one of those movies where ya have to pay attention, so I’m going to have to bid you all farewell 😉

Do you typically workout when sick? I usually give myself a day or two to rest (more if I’m feeling horrid) but I’ll give it a go after couple days, so long as I’m not hacking and sneezing all over the equipment. Then I just listen to the bod!
