Mini Pumpkin Seizure

G’morning! Today is the first week day of DLS time. I thought I woke up late this morning because the sunlight was already peering through the window at 6:00 a.m!

Glad you all enjoyed the pictures from the breast cancer benefit for my friend’s mom! It was such a good time:)

Although yesterday started out slow moving, once back home, I was struck by an overwhelming urge to cook and bake in the kitchen!

Usually I do some weekly meal prep on Mondays – but today my day is FILLED – so I took advantage of the free hours yesterday, and made some dinners for the week.

First up was Eat, Drink, and Be Vegan’s Polenta Casserole!

I can’t wait to try this out – it’s going to be tonight’s dinner 🙂 I have to spend a lot of time working at the gym today, and then have a late volleyball game across town, so popping this in the oven for a few minutes to warm up will be uber convenient.

Next up – Easiest lentil veggie burgers!

I love making my own veggie burgers, but really dislike all the pre-cooking. That’s where these burgers come into play.

There were seriously like 4 steps:

– Boil half a bag of lentils and preheat the oven to 375 degrees.

– pour in food processor, along with 2 garlic cloves, 1 chopped green bell pepper, salt, pepper, 1/4 c. tomato paste, and a little EVOO.

– While processing, add in a little more EVOO, and then pour in 1/2 . ww bread crumbs

– Form patties with wet hands, place patties on a greased baking sheet, and cook for 30 minutes, flipping half way through.

Voila! Simple as pie. A store bought pie, not a homemade apple pie. Which actually isn’t too bad to make either 😉

Only then did I look in the fridge and saw that I had a tupperware container of some pumpkin that probably needed to be used. I wouldn’t want it to go to waste….;)

All of the sudden, I think I had a mini pumpkin seizure, and I was pouring ingredients in the stand mixer and making Mama Pea’s Pumpkin Bars.

So I went with it, and continued on.

Guys. These bars are the moistest (ew, dirty word!) and densest bars ever! Absolutely delicious.

And the frosting. Ohhh the frosting.

And although I did perform a minor rookie mistake of turning on a mixer full of powdered sugar without the guard on…

I die! And go to pumpkin bar heaven.

I’m off to do a little strength training and take a spin class! I haven’t been able to stop thinking about Fridays class! 🙂 haha I do have an upcoming 5k to run this Sunday, so perhaps tomorrow will be a running day.

What’s in my Kitchen?

Good morning! And HAPPY Friday! I’m glad you all liked my choosing to be cheerful post. I was a little worried it sounded to corny, so I was so happy to see the positive -no pun intended;) – response!

 

Last night when I got home from class, I was still kind of wired. I get home around 9, but the hubski and I might as well be 90, as we head to bed around 9:30. Or we might as well not be tired, seeing as we both are at work by 6:30. Alas, I wasn’t tired at 9:30. So while the husband proceeded to sleep like a normal person, I was wide awake. I did what anyone fighting insomnia would to and decided to take pictures! 🙂 Right? Right…? hehe

 

I realized I’ve never done a fridge/pantry post! Thus, I decided now would be as good a time as any to do so 😀 Note that I didn’t prepare whatsoever by stocking up on everything a good little health blogger should have. AKA – I’m lacking in the fruit department.

On the top goes fruits, veggies, and bread I don’t want to refrigerate. Oh, and the nice random handle of Skol vodka. Only the best in this house! haha…nah, you don’t need the best vodka when you’re drinking…

Bloody Mary’s! See the mix back there. Along with some almond milk, kombucha, half and half, etc. The staples.

The leftovers would go on the second shelves. Some eggplant lasagna, tomato sauce, and pumpkin. And then the cheese drawer, which used to be the cheese and meat drawer, but the meat got nixed, as you know 😉

Carrots are a staple in my green monster, that’s a zucchini, and a portabello mushroom, which are also staples of mine. And I’ve recently become a big fan of broccoli sprouts.

Yeah…which isn’t so much filled with fruit. Well, there is a lot of dried fruit in there. Dried fruit and bananas – that’s about the extent of fruit in this house right now – it’s a tragedy!

As you can see, I love my nut butters, tea, soups, and cereals! What woman doesn’t? I think one of my bucket list items should be to collect every flavor of Peanut Butter and Company Peanut butter.  I’m a winner 😉

We have a shelf just for spices, along with a spinning spice rack. I’m a spice nut and refuse to throw any out! The spicier the better! Spice is the spice in life…oh wait…:)

And this is what I consider the baking cabinet. It has everything I need for baking – oils, powders, flours, chocolate, etc.

Lastly, and most importantly, we have my favorite: the snacky cabinet!

Here you’ll find various snack items, including Annie’s Bunny grahams (always), Gingerbread cookies, pita chips, Mary’s Gone crackers, etc..

Any big plans for the weekend? I can’t wait to head to Chicago tomorrow for the race on Sunday:D Today I’ve got a pretty long to-do list, including logging in a 3 mile run, getting groceries (FRUIT!) cleaning, studying, and getting ready for tomorrow.
