Leftovers, Late Nights, Lost Spin Classes

Mornin’…

Oy. When my alarm clock went off this morning to meet my friend, Heidi at spin class, I wasn’t sure it was going to happen. I got up, I poured coffee, and then realized there was no way I was getting my butt to spin class, bags packed for the day, with breakfast + lunch and snacks in tote.

I planned to…

but then yesterday I got a call from a friend who happened to be coming in from Chicago to the train station here in town with no apparent way on how she would get home (an hour away) from there. A last minute call to me was her solution. I wasn’t ecstatic about cancelling off clients that I had last night, but I also didn’t want my friend to be stranded. So I picked her up at the train station and drove her home, and drove back. When I got home, I had some blog work to do and some clients to email – so it was a late one.

Needless to say, this guy will be my BFF for the day (sorry besties, I love you guys too 😉 )

Perhaps I’ll get in a run and lift session after my evening clients tonight, or perhaps I’ll take another rest day. My body’s been craving rest this week, it seems. I did get in a quick 20 minute power yoga podcast this morning, though!

Unsurprisingly, dinner was also eaten on the run last night – I reached into the depths of the fridge, and forgot all about the butternut squash lasagna that I’d made a couple months ago!

After making the judgment call that the green-ish tinge on the outside of the lasagna was freezer burn, not mold (I’d say I was 60% certain – LOL) I micro waved it up and inhaled it.

And hey, I’m not sick this morning, so I must have made the right call!

 How risky are you when it comes to deciding whether to eat food that may or may not have gone bad? I consider myself pretty risky, but I went with going ahead and eating the lasagna just because it had been in the freezer – can mold grow in temps that cold anyway??!

Return of the Appetite

What a day! I feel better than I felt yesterday, which is almost 100% I’d say I’m about at 90% actually. Hopefully I’ll be back to normal by tomorrow morning.

This morning started out bright and early with a Body Attack class. My friend Heidi somehow drug me out of bed and to a 5:30 a.m. class. Did I mention I don’t have to train today until 4:30 pm? I’m glad she did, though, because it was a blast! Erika, you’re right – this class is awesome! It was quick paced, fun, and booty-kicking!

After the class I did about 15 minutes worth of back and hamstrings, but I needed food like whoa. I forgot to grab something on my way out and I was famished.

Much bettah. Once breakfast digested, I finished out the workout with a 20 minutes heart-opening flow. And then got my work-from-home on for the BIC. It’s a deadline week, which means working more than I usually do.    IMG_0265

I’ve been craving nothing but fresh fruit the past few days, so I’ve been going with it as documented by my mid morning snack:

A juicy (Brown?) pear. Anyone know what kind the brown ones are called? I know they’re not Bartlett…

Then I showered up and made my way to running some not very fun, but very grown up errands, like changing my oil, getting my tires rotated, and making a return. What should have took under two hours took much longer than that, but we won’t go into the boring deets.

Signs that I’m feeling much better:

  • I exercised voluntarily and enthusiastically
  • I put on make up today
  • My appetite is back! and my ever present appetite for spice and veggies is back!

I hadn’t had a single vegetable (well, one that wasn’t attached to pizza or a sandwich) since Friday since I had the stomach flu, and today – I had a hankering for cauliflower!!

Well I have a client in a little bit [and a volleyball match after that – woot!!] and need to get some cleaning done beforehand!

Workouts of the Seasons

How are we on this fine Wednesday?

I just got done with an ab and tricep workout + some elliptical work. Again, I decided to sleep past my alarm, so I intend to get the rest of my workout done after my second client tonight, which will be shoulders and biceps! Splittin’ it up today, yo!

So yesterday was an incredibly long day. It was filled with work and activities, and the busyness made it speed by, but by the end I was one tired chica.

It started out with a quick interval run and moved on into some delicious OOIAJ:

One thing that perplexes me about Overnight Oats is how to get the nut butter good and mixed in. A barely-left empty jar solves that problem. Just scoop a little from the side with each bite! 

Then I was off to work at the BIC for the day. I broke for lunch around noon.

This salad was absolutely amazing. In it was a bed of romaine, topped with the previous night’s tofu, corn, sunflower seeds, craisins, black beans, and a dressing of EVOO + apple cider vinegar + stevia + sea salt.

Snacks included a choco PB Lara Bar, some dark chocolate almonds (love!) and an apple.

After a hard day’s work at the BIC, I had a small break before heading to the gym to train a couple clients. I wasn’t quite ready for dinner yet, but I needed something…

Workouts of the SeasonsSeasons

Here in Central IL, one has to seize the opportunity of outdoor activities during the months of May through October. In my opinion, November through March are just downright unbearable when it comes to Illinois weather. That is precisely why you see so much running going on lately. Yes, I’d like to try all the exciting workout DVD’s coming out, but I know I’ll be itching for something new to do come mid-December when running just simply isn’t an option for me (outdoors, at least.) I’d also like to get in some biking workouts before the summer ends, but I’m still working on getting the hubski to dive into that adventure with me.

Like the change of seasons, I have workout seasons. Winter is workout DVD time – I don’t even feel like driving to the gym when it get impossibly cold and snowy. I also do more yoga in the winter. Spring is definitely running season – the best running season, in my opinion. Summer is still running season, but by now I’ve usually added in riding the bike. And fall is typically gym season. For some reason, I lift the most weights, go to the most classes, and work on the most cardio machines in the fall.

Well today’s going to be another busy one – workin’ at the BIC and training two clients. Me<—chuggin’ along 😀

Runrise and NuNatural’s Stevia Winners

Hiiii there! Having a good week so far?

I just got back from an AMAZING sunrise run…a runrise! haha

Anyway, I warmed up by taking Niko for a quick 10 minute walk, and then as I took off on my own, the sun was just popping over the horizon. Beautiful. I believe I made a new PR to boot – I ran the entire 4.15 miles at an average speed of 8:55. Woohoo!

A word about speed – and racing: this weekend is the Steamboat Classic, and I’ve decided to run in the four mile race course. I was originally training for the 9 mile course, but I haven’t gotten a long run in over 7 miles in the past, well, month. So I’m going to go for the four miler and go for speed! Now I just have to figure out how I’m going to get there…It’s a big race, and it’s about 45 minutes to an hour away.

My first day back at the Big Insurance Company was yesterday, and it was actually a pretty good day! Busy it was, but stressful? Surprisingly not!
I was up at the ungodly hour of 4:00 a.m. to get ready for a 5:00 and 6:00 a.m. training appointment followed by a full day at BIC (the big insurance company.) I was feeling pretty rough this early, but nothing a cup of coffee and a good attitude can’t cure 😉

On the way to BIC from the gym, I snacked on a delicious wrap!

Only showing you the outside, because the inside looked more like … vomit? It tasted amazing though – one banana, full in tact, topped with a mixture of almond butter, protein powder, maca, and a wee bit of yogurt to make it spreadable.

The morning really sped by at the BIC, and around lunch time, I got together with an old coworker to sit, chat, eat, and break.

I felt like KERF with my salad + yogurt + cereal combination. Loved it!

I also snacked on an apple and a bit of trail mix throughout the day.

Exactly eight hours from when I arrived, I declared it quittin’ time. Once home, the hubski, Niko, and I took a quick stroll before I cranked out 30 sweaty minutes on our elliptical.

Post-workout nourishment was an unpictured apple + natural PB.

Then I was off to the gym to train two last clients for the day.

Dinner was boring (but good!) leftovers.

Surprisingly, I still had a bit of energy and felt great when all was said and done last night! I think this is going to be a good thing. Plus, I had my act together today. Had everything layed out the night before, had the coffee ready, lunch ready, etc. However, there was one mishap. As I changed from training clothes into my dress clothes this morning, I left my shirt and lululemon crops in the lockerroom! Doh! LOL I cut myself some slack as it was a crazy day.
The (good) kicker? When I got back to the gym 12 hours later, there were still there! No one stole my trainer shirt or Lululemon pants (that’d be kinda gross if they did, but still!)

There’s a Hole…in My House

And it’s letting all the bugs iiiin! (sang to the tune of Aerosmith’s “Hole in My Soul.” More on that later  😉

Happy Wednesday!! Or in the words of Coach Schuster, “It’s Wednesday. Do you know what that means?… Hump day.” LOL gLee was a good one last night 🙂

Anywho…

Yesterday after my bazillion morning training appointments (said with love!) and after my lunch-time appointment, I headed back to the house to actually eat lunch.

Leftovers were in order:

I took the fajita-style grilled veggies I made Monday night, and made a taco salad out of ‘em!

After snapping the pics, I added a dollop of Greek yogurt to serve as sour cream. Totally made the meal complete.

The hubski took an extra day off work yesterday so we could finish up the landscaping. After eating lunch, we bought and hauled rocks, picked out paint, and bought several other fixtures at the man-store (Menards aka Lowe’s-type store.) Once home, I had a banana.

After a few more hours of work, the part that I was dreading came. We painted our front door, so Shane had to take the door off the hinges for a good three to four hours! We have no storm door, and forgot to pick up a screen, so this meant four hours of the air turned off, bugs flying in, and one large hole in the front of our house:

While Shane was painting, I trained a couple more clients.

When I got home around 8, it was finally time to put the door back on. Hooray! Shane worked for a couple more hours (poor guy!) and I made myself some dinner:

For the dressing, I mixed equal parts of hummus, tahini, and apple cider vinegar, plus a little sea salt. It was amazingly delish.

This morning I woke up bright and early for a couple early morning training appointments. In between, I munched on a Kashi bar, but when I got home, I made a big girl’s breakfast:

Mixed it all together, took Niko on a little walk, and when home, it was all ready for me!

Well I’m off to do a little cleaning, run some errands, run, and then hopefully get a nap in before more training sessions tonight. Oh, and dealing with our fence. We had a bad storm last night, and it blew in an entire section of our fence!! We just got it installed last spring, so we’re not too happy about the situation. I told the hubski we gave the front yard so much TLC this weekend, that the back yard got jealous and retaliated 😉 LOL

Healthy Living Time Machine

Gooood morning!

Wow, it’s only 7:30, and I’ve been awake for three hours. Woot! Too bad I got about the same amount of sleep to boot. (Ha, I’m a poet.)

So this post is going to go down a little different. Switching things up a bit. Let’s play the backwards game! I’m going to tell you about my eats, exercise, and enjoyments going backwards in time. Kind of like a healthy living blog time machiiiiiine 😉

Just a minute ago, I had breakfast outside on the back porch with Niko in my sweaty running clothes:

Seriously, is there a way to make overnight oats look any uglier?

Nope, not even by sprinkling on feta cheese crumbled coconut butter on top. So. freaking. delicious, though. 1/3 c. oats, maca, stevia, sea salt, PB, greek yogurt, almond milk, Jay Robb, carob powder, and cocoa nibs.

I had actually planned on having hot oats for breakfast this morning, but after my client this morning at 5:00 a.m. (who beat out my 5:15 client for having the earliest session 😉 I don’t mind at all though!) I noticed the beast known as my appetite hadn’t reared its ugly beautiful head yet. I knew I only had a small window of time before it came, so I jumped at the chance of getting in an easy three mile run. And a hot and sweaty post-run Paige does not = an appetite for hot oats. Cold oats it was!

3.1 mile run: 29:09, and to break it down (wicka wicka!): 9:42, 9:26, 9:10.

I think my appetite held off so well because right before I went to bed, I had a bowl of chocolate Cheerios + almond milk:

Going back even further in time, before waking up at 4:30, I slept for about four hours. You see, I had a sand volleyball game on the other side of town last night that lasted until about 10:00. And we lost. No words, but I was very angry. See ya undefeated record!

A couple hours before the game of volley, I made some dinner. Being able to say, “make dinner” just makes me smile. For a couple months there, the hubski was on his own, and my meals were either frozen, salads, or soups. It’s a pleasure to be able to have time to cook again.

Veggie Chili!

This veggie chili was more than simple to make, though. In a sauce pan, I let some onion and garlic sweat it out. Then a mix of half black beans, half pinto beans, joined them, and then soon after, some diced tomatoes. Simmer down, folks.

After a few minutes of simmering down (folks), I added 1 tsp of ww flour, chili powder, cumin, paprika, cayenne, and sea salt and cooked on low. After about 10-15 minutes, I added hot sauce, and voila!

Where I come from in the Mid West, we eat peanut butter sandwiches with our chili!

Mmm. Totally compliments the spiciness of the chili.

The hours before dinner were spent wrapped up in a blanket in the basement watching 24. I knew I wouldn’t have time to watch it later on, but I had it get it in some how! We’re only on season three, but it’s getting INTENSE! I also got some work done and made a couple training plans throughout the afternoon.

Lunch was leftovers, in wrap form. The best way to eat leftovers, in my opinion.

I took the tofu I made for dinner Tuesday night, put it in a ww Flat Out wrap, drizzled on a little mustard, and added romaine and spinach:

Vega sent me this bag of smoothie mix to try out. The stats are amazing, per usual with Vega products:

And I love the fact that it’s 100% vegan and mostly raw.

I tried the Vanilla Almondilla flavor:

The taste? Spot on for deliciousness! I am typically wary of plant-based smoothie powders, but this one tasted great. The almond flavor was very strong, though, so you have to like the taste of almond/almond extract to enjoy this (which I do, and did!) Now I just wish I could try the other flavors! Other flavors available are berry, tropical, and chocolate.

Lunch was a little on the calorie-heavy side, but I needed the cals to fuel the workout I’d just finished. After my 11:00 training appointment, I warmed up a little and then ran a 4 mile interval run. I don’t think I could have sweat anymore during that run. The gym was so warm! ‘Twas a great run, though.

Another nice thing about not working full time? Mid morning naps. Before my 11:00 training sesh, I took a nap with Regis and Kelly Niko and Clarabelle. I’ve been having early morning clients lately, and it feels SO, SO good to be able to catch up on sleep.

Speaking of catching up on sleep, I’m gonna catch up on your lovely blogs, shower my stinky bod and try to log a couple extra hours before continuing on with my day 🙂

How good are you at napping? Are you able to fall asleep immediately, or does it turn into an hour long of *trying* to nap? I’m usually the latter. I’m hoping to change that, though!

Neurotoxin Burgers and Fries

Monday, Monday…

Today was a ho-hum day of sorts. Luckily, I was still in good spirits, because every time I caught myself ho-humming, I immediately snapped myself out of it!

I woke up and had a bicep, back, hammies, and glutes strength session planned in the locale of the upstairs workout room.

After about 45 minutes worth of rows, rear delt flies, various bicep curls, dead lifts, hammie curls etc, I showered, dressed and prepared some grub.

And by preapred, I mean I scooped a cups worth of steel cut oats I made yesterday in bulk for this week and heated it up in the microwave. I topped it with peanut butter and coconut butter, naturally.

Strength training makes me hungry. At least today it did. My appetite was in 6th gear! I squashed it with an unpictured apple and mini luna bar before devouring leftovers for lunch!

Amazing. I admit that I had double what’s on that plate.

Work went by in kind of a haze. I felt like my brain was foggy for the better part of the afternoon. And my client I was supposed to train after work is still sick, but that’s OK, because I just wanted a glass of red wine. We were out of red wine, so muscato will do just fine:)

You can see I’m one of those types who immediately throws their hair back and puts on a T-shirt and sweats after work. Luckily the hubski doesn’t mind 🙂 Or so he says… What can I say? I’d rather be comfy! 

We threw around what we wanted to do for dinner during our hour of happy and not surprisingly decided to grill out. Well, Shane grilled out, and I grilled in…the oven.

Have you guys seen the nut butter parsnip fries recipe Angela had on her blog the other day?IMG_6503

Well I tried them with a mix of carrots and sweet potato, and omg they are out of this world delicious. I had to force myself to stop eating them or else I’d get sick. SO. GOOD.

I also tossed some Brussels sprouts in olive oil spray, salt, and pepper, and roasted them at 400º for about 10 minutes, flipping after five.

Side note about veggie burgers. Lara posted this article about the dangers of non organic veggie burgers, and I gotta admit, it had me cringing as I ate my non organic Boca burger tonight. Mmm neurotoxins…

After dinner I took Niko on her evening walk (she had a post-breakfast walk, too…trying to get her more exercise:)) and now I’m writing this post! It’s crazy…it’s only 7:30 and I have the whole night to relax! This never happens two days in a row! Weird…

How long does it take you to change into sweats/comfy clothes after getting home? Me? Like 5 minutes, tops 🙂
