Mini Pumpkin Seizure

G’morning! Today is the first week day of DLS time. I thought I woke up late this morning because the sunlight was already peering through the window at 6:00 a.m!

Glad you all enjoyed the pictures from the breast cancer benefit for my friend’s mom! It was such a good time:)

Although yesterday started out slow moving, once back home, I was struck by an overwhelming urge to cook and bake in the kitchen!

Usually I do some weekly meal prep on Mondays – but today my day is FILLED – so I took advantage of the free hours yesterday, and made some dinners for the week.

First up was Eat, Drink, and Be Vegan’s Polenta Casserole!

I can’t wait to try this out – it’s going to be tonight’s dinner 🙂 I have to spend a lot of time working at the gym today, and then have a late volleyball game across town, so popping this in the oven for a few minutes to warm up will be uber convenient.

Next up – Easiest lentil veggie burgers!

I love making my own veggie burgers, but really dislike all the pre-cooking. That’s where these burgers come into play.

There were seriously like 4 steps:

– Boil half a bag of lentils and preheat the oven to 375 degrees.

– pour in food processor, along with 2 garlic cloves, 1 chopped green bell pepper, salt, pepper, 1/4 c. tomato paste, and a little EVOO.

– While processing, add in a little more EVOO, and then pour in 1/2 . ww bread crumbs

– Form patties with wet hands, place patties on a greased baking sheet, and cook for 30 minutes, flipping half way through.

Voila! Simple as pie. A store bought pie, not a homemade apple pie. Which actually isn’t too bad to make either 😉

Only then did I look in the fridge and saw that I had a tupperware container of some pumpkin that probably needed to be used. I wouldn’t want it to go to waste….;)

All of the sudden, I think I had a mini pumpkin seizure, and I was pouring ingredients in the stand mixer and making Mama Pea’s Pumpkin Bars.

So I went with it, and continued on.

Guys. These bars are the moistest (ew, dirty word!) and densest bars ever! Absolutely delicious.

And the frosting. Ohhh the frosting.

And although I did perform a minor rookie mistake of turning on a mixer full of powdered sugar without the guard on…

I’m off to do a little strength training and take a spin class! I haven’t been able to stop thinking about Fridays class! 🙂 haha I do have an upcoming 5k to run this Sunday, so perhaps tomorrow will be a running day.

Not Your Frozen Veggie Burger

Evening! Two posts in one day? Who is this? Paige the Blogger from 2009?

I guess maybe I’m just caught up in all the excitement from Caitlin’s appearance on the Today Show promoting Operation Beautiful this morning! How awesome was that? Definitely an inspiration.

Before watching her segment, I had my head in the clouds – literally! I sucked it up and took my 4.25 miler outside in the dense, dense fog. I should have taken a picture. It was dense! Dense (I just had to say it again.) It was an OK run and my average pace was 9:  . Not my best, but in my opinion any time you get out there and do it should be considered a good run🙂 Am I right?

I’m glad you all enjoyed the elevated lunge vlog post! It’s a killer exercise that’s great because it can be modified based on your fitness levels 🙂

For dinner tonight I cooked up one of my favorites. The hubski wanted to cook on the grill, but I just didn’t want to eat a frozen veggie burger (or frozen disc as Shane jokingly refers to them) for dinner tonight. I had an extra hour due to a client cancellation at the last minute and darnit, I wouldn’t waste it on a frozen veggie burger.

The rice + lentils + peppers + spice combination about knocks my head off. Plus, their so juicy and mm..mmmo…the m word that’s synonymous with juicy (which I can’t stand)– without being too soggy.

Tonight I had one atop a bed of romaine and spinach, with a side of a small red potato

I dressed the salad with a dollop of hummus and some balsamic – yum 😀

Well I’m going to get a bit of studying in before I go kill the new brain cells attained from it by watching Jersey Shore. 😉

Good*yaaawwwn* Monday morning! I was up pretty early to train a client, but I think I might squeeze in a nap after my second one. I slept like crapola last night!

What a weekend! 🙂

Saturday, as you know, I didn’t get into the race, but instead attended a group power class. Power power:

Just yer’ breakfast quesadilla. Inside the Flat Out wrap was a mixture of banana, almond butter, and protein powder. Deliciousness!

After power and then groceries, we were off to our parents’ to celebrate Father’s Day! My parents’ have a pool, so we kicked it poolside the whole day:

Then we cleaned up and headed to Shane’s dad’s house for some visiting – and took he and his girlfriend out for dinner. It was a very fun day all around:)

Sunday was a scheduled rest day, and man was I dragging! I headed to the gym to train a client after making some waffles:

The waffles were topped with my signature breakfast topping now a days – Greek yogurt + almond butter + pure maple syrup. Seriously guys, whether it’s oatmeal, pancakes, or waffles, try this topping!

I also topped it with the biggest blackberries I’d ever seen:

After breakfast, I trained a client, cleaned, and worked on a creative project:

Kombucha + lavender candles + positive thinking CD (a brainwaves CD my client gave me!) = creative fuel. And although this fuel served my creativity appetite, it did nothing for my belly.

I’ve had a bag of lentils for who knows how long, and yesterday was the day they’d be eaten. The night before, I was talking to Shane’s dad about being vegetarian. He was vegan for about seven years, and we were talking about Boca burgers, and all the hard to pronounce ingredients in them. In fact, when Shane grills out, he doesn’t even call it a veggie burger! He says, “hun – your disc is ready to eat!” LOL

That got me to thinking – it’s been a while since I’ve made my own veggie burgers! My friends, the homemade veggie burger dry spell hath ended:

IMG_7804I made a ton – enough to freeze a few! Recipe will be posted soon (hopefully today!) They were very good! So good, that I even thought Shane might like them. It’s been a while since I’ve forced suggested he try some of my vegetarian fare. But just like how Shane is with The Real Housewives, he just doesn’t understand veggie burgers. Someday, someday….

Sometime throughout the day, I also made another French Press of coffee:

After some lounging, writing, more cleaning (oh, Sundays…) and reading it was about dinner time. A bit on reading…since blogging, my reading material has decreased tremendously. I used to be able to read book after book after book.  Especially when I was young, sometimes I’d read three in one day! Granted, those books were about 100 pages long and involved people looking like skeleton’s in pictures, but I dominated those books, nonetheless.

But I digress…

Back to dinner. I didn’t use all the lentils I cooked for the veggie burgers, so I thought it’d make a good addition to some red sauce.

I made his and hers, of course. The one of the left is red meat sauce and the one on the right, red lentil sauce.

I poured the sauce on top of some pan fried polenta, and called it done.

Alongside were some green beans, and we called it done.

This time, we BOTH gobbled it up fast.

We watched the Informant the rest of the night, which ended up being pretty funny! Lots of Deep Thoughts, hehe

Well I’m off to catch a spin class, train a client, and get some work done.
