Saucy Summer Date Night

Heya 🙂 Happy weekend 😉

Holidays, sports games, birthdays, vacations, anniversaries. Books, TV shows, dates, shopping. We all like to look forward to things, big or small. Just knowing that something exciting will happen in the future – big or small- puts an extra hop in my step.

On any given day, I like to try to have two things to look forward to – one long term and one short term.

I’ll get to the long term event in another post, but yesterday, I had a skip to my step because I knew tonight was date night! (ok, Fridays tend to make me skip as well in general.)

Typically, the husband and I will choose either Friday or Saturday to go out to eat, hit up the town, or meet out with a few friends. Sticking to one night keeps it an exciting, out of the norm activity, and also keeps our wallets happy.

After the husband got home from work and I finished cleaning the house, we headed out. First, to buy a coffee maker. I love the French Press, however, the husband hates the process of using it, so I’m always the one who makes the morning French Press coffee. Since he’s been waking up before me lately, this means he typically doesn’t get coffee until he’s running out the door, if at all. heh That said, we decided to get a grind and brew coffee maker that we can program to have coffee ready when we he wakes up.



Where was I? Oh right, date night.

After the coffee maker + beans buying excursion, we headed to one of our favorite little pizza joints in town, Firehouse Grill:


It’s a modern looking fire house-type that serves pizza with the most amazing sauce.

Sad face because I got a summer shandy, soon to be a thing of the past. (until next summer…)



After pizza, we had a wild and rambunctious night of setting up our new coffee and brewing the first cup (despite it being 9 p.m…)

      This morning, I did something I haven’t done in a loooong time.



I made bacon for the husband! I’m not a fan of bacon (even cooking it or looking at it.) I know that’s probably a sin to say considering how popular bacon is right now in America. Regardless, it’s true. It just never suited my fancy. Didn’t rock my boat. Plus it leaves you smelling like bacon perfume (I’m assuming this is real) the rest of the day. But I digress. My point is, I was a good wifey and cooked bacon for my husband for the first time in years.

I had some whole wheat protein pancakes! While reading Susan’s blog the other day, I saw that she just uses her same waffle recipe for her pancakes. I tried this, realized that mine were too dry for pancakes, and added more almond milk.


Maybe a little too much?



They were a little runny and crumbly. But the PB + Greek yog + smashed banana topping made up for it 😉




Now I’m tworkin’ it at the gym, training a few clients, and doing my weekend thang. Today’s a work day, but I’m planning for tomorrow to be 90% fun day! 🙂

PDR and Dinner at Rosie’s

Hey hey! I survived my 7 miler!! Although I wore my new workout gear, I didn’t really get to show it off. I ended up having to wear my Lululemon track jacket the entire time, because it was only 53º out 😦 Oh well. This was my first time running in the “cold” aka not beastly hot, (yep, it was hot just last weekend!) so I wasn’t too sure what to expect.

So after I got my gear on, including my new socks:

(Thank GOD they let me know which feet they go on 😉 LOL) I grabbed a bottle of cold water, my iPod, and some Luna Moons and headed out.

The first mile was me adjusting myself the entire time. I was wearing my new shoes, so I had to re-tie them a couple times, I had to re-thread my iPod head phones through the socket of my jacket again, and then I finally had to ditch my water bottle. I just could not run with this thing! It was too cold and heavy and was just messing up my groove. Looks like I may have to head back to Often Running to pick up a Camel Back water holder.

After I got myself situated, it was smooth sailing. I added a new list of songs to a running play list, and I just totally jammed out the entire time. I’ll post my play list soon (don’t want to make this post too long!) I ended up running down to ISU’s campus, and meandering about the quad, and kinda got lost and wound up having to run up an extra hill while I was at it. Oh well, no big deal!

I was really surprised at how easy this run was for me. It could have been because I wasn’t sweating as much as I usually do, due to the drop in temperature. Around mile 6, I ate 2 Luna Moons before stopping at a drinking fountain.

I could feel the energy, because I usually have trouble on that last incline back to my house, but I think the extra boost helped my endurance.

I made it back in 1:08:07 and then stretched my little heart out. As tradition goes (and as Shane requested), I then made some oat and whole wheat pancakes for my post-run fuel up. This time, instead of adding blueberries, I added chocolate chips (hells yeah!) and instead of having three or four, I had one with a side of a veggie omelet.

Oh-so-gooood! It was the perfect post-run brunch.

Surprisingly, I didn’t feel like crawling into bed in fetal position after my shower, so I did some laundry, and cleaned up a little. Then the fatigue hit me and I spent a good 2 hours in horizontal position watching a movie in the theater downstairs. I did manage to press pause and scrounge up a snack of plain Oikos, blueberries and granola, though. (Unpictured, because my camera is all the sudden taking blurry pics 😦 All in all, I think it was a great run, and I’m excited for 7.5 miles next Sunday 😀

Good Eats

Last night for dinner, Shane and I went to one of our favorites here in town, Rosies.

This place has so many different and unique combinations of food, and they always have such great specials. Shane thought of going here, and I was totally glad he came up with the idea!

We sat in the bar area, which has a little more charm, in my opinion, and sat on the same side of a booth.

My stomach was a little off (I think I was just super hungry) so I didn’t get any big-girl drinks, just water. We started off with one of their appetizers on special, the Portabella Mushroom Ravioli.

Holy yum-topia. Goodness this was goodness. It had a ginormous portabella mushroom, layered with spinach, ricotta, Italian sausage, mozzarella, tomatoes, and marinara type sauce. I skimmed off most of the sausage, and ate a very healthy portion. I SO want to try and re-create this dish. Wow.

Our entrees came out, and I had my usual: the Shrimp Greek Salad:

Shrimp, olives, feta, artichoke, and onions galore! This salad is to-die-for. I only ate half, and took home half for lunch today. (Note: I didn’t have this for lunch today, because it fell on the floor and I lost it. Tear :()

Shane got another baked ravioli dish, which was just blanketed in mozzarella.

We were going to go to a cookout/boozefest afterward, but since my tummy wasn’t feeling the best, the last thing I wanted to do was drink, so we just went home and called it a night (on the couch.) This was probably the better idea for my run this morning, too.

Third Time’s a Charm or Three Strikes You’re Out?

I was a crazy woman again today and woke up at 4:30 to meet my friend, Heidi at the gym. I cranked out a 3.1 mile tempo run and then did some elliptical. It was early, but it felt great! And today, I know I won’t have time to run after work, as I’m cooking The Fitnessista‘s enchiladas, then I have a jewelry/candle party to go to 😀

Now, as I write (and as a recovery drink,) I’m downing a Green Monster. I put together the ingredients last night:

I had just enough spinach left, so I piled everything in the spinach container. Also in the GM pool was a frozen banana, some ice cubes, and some organic apple juice.

I’d show you the finished product, but trust me, it tastes a lot better than it looks! Blueberries always seem to do that…

I’m very sad to say that third time’s a charm sucked just as much as the first two times. Yes, the quinoa dinner was a big fail! It was such a good idea in theory:

-toasted quinoa

-grilled eggplants

-asparagus, mushrooms, and onion in red sauce

I thought it was going to be great! I mean, it looked super pretty:D

After that, I threw the rest out. Kids, don’t try this one at home :-/

That’s it! I’m done with Quinoa 😦

So after those few craptastic bites, I opted for, you guessed it, more leftovers (had to keep with the theme today.)

SO good, and hey, I didn’t have to choke em down 😀

Oh well, I’ve had so many dinner successes in a row, I guess I was ready for a dinner fail 😛

Nothing a glass of Chardonnay can’t fix 😉

(Sorry for the darkness, I took it in my basement bar with my iPhone.) I enjoyed this crisp, light, wine while vegging out with the hubski. We watched Surfer, Dude with Matthew McConauhhey. It turned out actually pretty funny! OK, and a wee bit stupid. It ended up being a nice relaxing way to end the Monday – the way they all should be.

Niko even joined in on the movie night fun 🙂

So now it’s time go back to work! *le sigh* Although, I’m going to be doing an experiment today at work for the blog. (Don’t worry, boss, I won’t be slacking or multi-tasking) I’ll let you all know what I’m talking about for one of tomorrow’s posts! 🙂

Happy Monday=Success!

Hola! I am proud to say that I did not catch myself feeling stabby once today! I think that’s a first for me on a Monday. Putting forth the effort to be optimistic on a Monday did, however lead me to notice how crabby and rude others can on Monday. I didn’t let it bother me though. I mean, let it slide right? It’s their right to be crabby on a Monday?

Anyway, today was pretty status quo. Work wasn’t insane like last week which is nice. I got some “house cleaning” stuff done there, which is something I haven’t been able to do for a while.

I finished my “butt-load” (heh) of pancakes this morning for breakfast. They were just as good the second day! After scarfing them down, I had about one bite left and thought, “oh, I forgot to take a picture!” No worries, to see them in their delicious entirety, they’re right here.

Lunch was spent running errands, so I had to grab it on the go and eat it back at work. It ended up being a Quiznos oven roasted chicken chopped salad. Probably not the best choice, but it was sure yummy 😀

Since it was somewhat nutritionally void, I followed it with a banana dog.

After cleaning up some cabinets at my desk, I noticed it was already time to go home, so I grabbed my Peanut Butter Cookie Lara Bar. Mmm (unpictured.)

I’m glad I kept myself busy, because I tend to get a little snacky at work when things are a little slow.

Work it Out!

Today’s workout was abs, legs and some elliptical!

Abs was a whole lotta planks and side planks! I was going to put in an ab DVD, but I was too busy watching the Real World (gotta say, I’m not too impressed with this cast.)

I just did my usual butt-boosting work out for legs and glutes. Then, I finished it off with an easy 35 minutes on the elliptical.

It was a nice Monday workout for me! I take Monday workouts a little easy because usually my long runs are on Sunday. How are your workouts on Monday? Back to the grind and all out? Or do you ease back in to it like I do?

Lazy Sundays=Great Sundays!

Hey hey! I hope all of you are soaking up the rest of your weekend! Today has been nice and relaxing for me. But before I get into the details, I wanted to let you know I’m revamping my blog! 😀 You might have noticed I changed my background today. I hope ya’ll like it. Next up, I’m getting a new header! Shane and I cruised through the city today taking pictures of possible candidates for a header graphic. If I have a hard time picking one, I might be asking you for your opinions.

Personal Record Run!

I did it! I ended up running 5.5 miles this morning. At first I didn’t think it was gonna happen. I just didn’t feel that into it. I was even stalling by taking out the garbage (something I never do!) and asking Shane random questions haha. After eating half of a banana…

…I finally got my butt out the door.

I can’t believe how easy it felt! I did a nice slow pace (for me) and finished in about 53 minutes. Here are my other stats:

It felt amazing!!! I really felt like I could run longer, but I was back at my front door, so I just headed inside lol.

Naturally, I was famished afterward, so I started to whip up some
bluuueberry pancakes. I used the Zesty Recipe again, but made a couple minor tweaks (including the blueberries.)

On top was a choice of pure maple syrup and natural blueberry syrup.

Mighty Maple turned out to be another topping for my cakes.

All together now!

They were so delicious. This recipe makes a butt-load of pancakes (yes, butt-load is a measurement!) so I saved the rest to eat either tonight or tomorrow morning.

After showering and taking pictures all around Normal I made myself a Green Monster. I used the Amazing Grass – Wheat Grass in today’s smoothie. I could taste it, and while it’s an excellent serving of antioxidants and vitamins, I favored the Green Super Food taste more. It did give me a little pick-me-up, though! (Mental or not, I was happy to take it!)

What else went into the pool:

For lunch, I just had to bust out my handy dandy George Foreman Grill. Shane wanted a grilled cheese, so I whipped up one of those babies in no time!

I really wasn’t sure what I wanted, but somehow ended up making an egg fritada with a side of Ezekial toast. The fritada had summer squash, goat cheese, and red pepper sprinkled on top.

And one two of these bad boys for dessert.

I’m trying to decide what I’ll cook for dinner tonight. I wanted to make mango chicken, but I can’t find that recipe anywhere! I swear I got it from Carrots ‘N Cake, but I couldn’t find it on her blog. We’ll see though!

Hodge Podge Sundays

How is it Monday again?! I swear the weekend started just a couple minutes ago…

Anyway, yesterday was kind of a random/hodge-podge of a day. I eventually got out of my funk, thanks to some readers’ kind comments, and from a little endorphin-boosting QT with my beloved elliptical.

Yes, even though I was feeling slightly crappy, I managed to get in about 30 minutes on the elliptical. I also did legs, so I’m sure I’ll feel that tomorrow.

The weather here was SO beautiful yesterday, I just had to get out of the house. So I took the Nik-Nack for about a 20 minute walk. Both she and I enjoyed it thoroughly.

After getting in a little exercise, I was feeling a little hungry again. (It took a while though after that HUGE omelet!)

So I made myself a …purple? Monster.

No spinach went in this time, but lots of other goodness did.

It was fab!
So yeah, that was lunch. Throughout the whole day I did some mini tasks, like the dishes, laundry, etc. I also cut up the most juicy pineapple!

Pineapple’s such a pain to cut up, but so worth it when you get to the good stuff!!

I’m not sure what else made the time go by so fast, but all the sudden, it was 7:30, and I was hungry. I didn’t feel like cooking anything, and I knew Shane wasn’t going to, so I decided to have breakfast for dinner. First I made a little oatmeal in a PB container:

Oh yes, I did. Then I re-heated some of Saturday’s oat pancakes.

As you can see, food/meals was just kind of random yesterday.

The rest of the night was spent in front of the tube, just vegging out. I needed a good veg out session! 🙂

I kind of slept like crap last night. Got to bed on time, but just tossed and turned. So I thought a Green Monster would help give me a boost this morning.

Back to the green 😀 This one is almost a toxic color green LOL. It was a very pineappley green monster and tasted great.

Well I’ve only got a few minutes before leaving for work, so I need to pack up and head out! Back to the grind!


Saturday Mischief

Saturdays are the best. I’ve gotten so much done today, and it’s only half over! Plus, I got in some good eats.

I intended on waking up and going straight to the gym, but the lazy side of me wanted to make oat pancakes instead. The latter won me over 😛

There’s a lot of oat pancake recipes floating around the blogosphere right now, but I got this one from Oh She Glows

They were super simple to make, and turned out wonderful. I had mine with some Mighty Maple Peanut Butter and some pure maple syrup.

Of course, I enjoyed my breakfast with a cup of joe.

MMmmm. Next time I’ll be brave enough to be a little more creative and add in some mix-ins.

After inhaling breakfast, I met up with my friend, Carmody at the Farmer’s Market. I swear it seemed even bigger this week than the last time we went. I think the cooler weather brought out double the amount of people, too.

There was TONS of cool produce that I had no clue even existed. Like Squash Blossoms?

Apparently they are edible flowers that can either make prettiful garnishes or be stuffed with cheese and fried up, as they are quite bland alone.

Another one was lilac peppers. I thought these were SO pretty in color.

I was completely out of honey at home, so I got super excited to see this booth:

I ended up getting the second from the left. And yes, the only reason why is because it was shaped like a cute little bear! 😛

In addition to food, the Farmer’s Market also has on display all kinds of art work from hand-made purses to glass blown jewelry. Today one of the vendors was actually blowing the glass here at the market.

It was really cool to watch him melt and mold the glass in such awesome jewelry.

Leaving with 3 bags full of goods, I ended up spending more than intended – as usual!

Once I got the goods home and put away, it was gym time. Today I took it pretty easy:

  • 10 minute warm up walk on the treadmill at 6.5% incline
  • Weights – which included the Pull Muscles: Bicep curls, modified bicep curls, lateral pull down, straight arm lateral pull down, row, and reverse crunches on a stability ball
  • 10 minute cool down walk on the treadmill at 6.5% incline

I left feeling like I had a good workout, but not wore out. However, I was starving again. Lunch was BBQ! I went out to eat at my favorite BBQ place here in town, Bandana’s. As usual, I ordered the pork plate. For sides I got green beans and a baked potato. It also comes with garlic bread, of which I had a couple bites.

As you can see, the pork on my plate is naked. But don’t worry, I didn’t let it stay that way! I gave it an assortment of sauce 😛

And had an Iced Tea to wash it all down.

Now it’s time for a little relaxing before beginning part two of Saturday. Tonight, my good friend Kim and her BF and coming over to play. I’m sure we’ll be up to no good! 😛 They’re from out of town, so they will probably end up staying over night here. If so, this will probably be my last post of the day, so I hope you have a great part two to your Saturday, too!
