Fish Food Beans For Dinner

My, my, what a marathon of a Monday yesterday was! It was one of those days that seemed daunting in the days before, and then at the very end you’re left thinking, “wow, I made it through!” You know?

Not that it was a bad day – there was just a lot packed in. I was at the gym working from 11 until about 7, then I trained a new client out of her house from 7:30-8:30, and then had a volleyball game from 9-10:30! Go go go!

The volleyball game was a blast – and we won all three games!! I left a happy, sweaty mess. Much happier than after last week’s loss 😀

I did manage to somehow sneak in dinner in between my obligations:


Squash + black beans + feta = best combination ever.


Or so I thought they were black beans when I bought them…


When I opened the can, I noticed I actually got black soy beans! No wonder they were on sale…

I wasn’t too happy about that, since I’d already had soy at lunch, but this is what made me less happy:


FISH FOOD!! I had a bad seaweed experience last year (it tastes like fish food flakes!!) so I was extremely leery.

I enjoyed the squash ‘n beans with some Brussels Sprouts seasoned with TJ’s Every Day Seasoning:



But fortunately, they tasted like regular ol’ black beans!

Around 11:00, after playing volleyball and showering, I was hungry again. Playing vball works up an appetite!


Whole wheat bagel thins I loaded up with some homemade pumpkin cream cheese (3 parts cream cheese to 1 part pumpkin, 1 T pumpkin pie spice, 3 T. Maple Syrup – whipped up) and called it good.

I got these bagel thins at the store the other day as an impulse buy. And they sounded perfect for a nighttime snack since they weren’t too heavy!


Have you jumped on the “thins” bread train? I’m not one to be afraid of carbs, but sometimes you just don’t need all that bread! And bread with wholes in it is just more fun 😉

Well, actually, I sat and ate almost half the bag of these before calling it good…


…but that’s neither here nor there 😉


My day’s wide open today, but I have so much to do! I think I’ll start it off with a little yoga 🙂 I might try to run a little later today, too.

Consoling Enchiladas and Rest ‘Weeks’

Another sad moment for this statistics queen, my volleyball team received its first big “L” of the season last night.



We had a disadvantage of only playing with 5 players, but the other team was down right GOOD. I may or may not have left with the imprint of a volleyball on my chest. Erm, yeah…

It’s OK though – I drowned my sorrows in some enchiladas!!



I swear they’re not eggs. I just went a little overboard with the cheddar jack 😉

I based it on this recipe, but made two different batches. I switched it up big time though. I also made them vegetarian – and used just mushrooms, garlic, tomatoes, and cauliflower as the vegetable base. Then at the very end, I added black beans and lentils to the mixture.



Must. Use. This. Mixture again. If you guys are interested, I can post what I did and used exactly, because I switched it up pretty big time from the recipe.

I love refried beans, but whenever I make them from a can, they remind me WAY too much of Clarabelle’s wet food. Then I automatically think they taste bad too :-/



I topped my salad with ‘em anyway, along with some salsa. 🙂

It’s been quite a while since we’ve had an enchilada night! They’re so easy to make and great to prepare in advance, too. For example, today I had a client around 4:00, so I made the innards and stuffed the tortillas, “made their beds,” and packed ‘em away in the fridge. Then Shane just stuck them in the oven about 20 minutes before he knew I’d get home at 375 degrees. 


Wa. La.

It’s been a bit of a sweet tooth round these parts lately with all the baking and birthday goodies, so no dessert for me afterward. I’m going to attempt to go light on the sugar this week. We’ll see how that turns out 😉

Time to go get ready for that place called work! I skipped my workout today because I figured my body needs a rest – even though I took a day off a couple days ago. I’ve actually been planning to have a week that consists of more rest days than workout days soon. In my opinion, ever now and then (maybe once every three months) the body needs a rest week – not just a rest day – for various reasons. Anyone else out there follow this notion?

Odd Timing for a Workout

Hi guys! How’s it going? I don’t know about you, but I freaked out a little bit when I looked out the window yesterday at 4:30 pm to see the last bits of the sun sinking down in the sky.

This made last night’s volleyball game seem all the more late. The game was at 9:00 pm – and the game was a little over an hour, so I got home pretty late as is. But as I was driving to the game, I felt like I was leaving in the middle of the night!! It’d be easy to be mopey and not give it my all, but what fun would that be?! Even though the game was late, it was still a good time – as always.

Luckily we won.  

Luckily, my work schedule is flexible.

Today’s a BIC day, but I decided to go into the office about an hour later than I usually get there on Tuesdays so I could get at least 6 or 7 hours of sleep. After shower and a snack, I wasn’t in bed until about midnight.

Before the game, I took advantage of a time-saver meal I’d made on Sunday for dinner.


Polenta Casserole!!   

I had a small square of it since I’d be busting my booty for vball soon after. I have to say, this was delicious!! I really wasn’t sure. I mean – I like all the ingredients, but I wasn’t quite sure how they’d go together.


Verdict’s in – they go amazingly well together! 😀

Honestly I was still a little hungry after eating this – but I don’t like “working out” on a full stomach.

Frozen fruit is an excellent snack choice when you’re worried about this. Since it’s frozen, it’s hard to over eat and end up with a belly ache, but it gives that sweetness to finish off a meal:


When I got home from the game, I wasn’t quite sure what to eat for a “post workout” snack. I got in a really good workout playing, and wasn’t very hungry, and it was nearly 11 pm. But I knew since my metabolism was raging, if I didn’t eat anything, I’d probably wake up around 3 in the morning, ravaging the fridge!

When I want a snack that’s more for function than for taste, I have a go-to snack, involving three ingredients.


I use the crispy brown rice cereal – which has about zero sugar in it (good for when you’re going to sleep soon) and then mix in a half scoop of protein powder for satiety, and then pour in some almond milk!


It looks nasty, but it really a great re-fueling snack. It’s pretty tasty, too, in my opinion!

The plan was to sleep in today, but for some reason, I was up at 5:30 anyway… I took use of the time by getting in a quick 3 mile tempo run on the treadmill, and then doing some leg work. Now my stomach feels a little urpy after breakfast – hopefully that will go away soon!

What are some snacks that out eat close to heading to bed? Toast works well for me, too. Or a piece of fruit!

Rolling Around

Hey there!! Happy Saturday 😀

I’m one of those twenty-somethings who calls her parents every single day. My brother’s the same way, I swear, so it’s not just me. It’s most convenient to call on my way to work, during which most of the time I’ll catch them as they’re drinking coffee. But every now and then, my mom, who is retired and teaches part time, will warily reach over from lying in her bed and answer the phone.


“mom, did I wake you?”

“oh no, I’ve been rolling around for about an hour. I need to get up.”

This morning, I physically woke up a little after 6:00, but I didn’t want to be awake. So I’ve spent the past hour and a half “rolling around.” Eventually I brought in my laptop and some coffee as I was getting restless:



But I was in good company.



That’s a Niko bump.



Sorry, kiddo.

Yesterday had I told the husband I planned on waking up and cleaning the house before my run this morning, so I had Clarabelle guard the door so I could make like I was making the bed instead of rolling around in it. 😉


I love lazy mornings:)

Besides – I needed the rest from the husband and my date night last night! I’m half way kidding. We managed to fit a bar, thai food, and a volleyball game into THREE hours! haha. A new take on speed dating 😉

We’d actually planned on bowling, but then when we saw that ISU was playing at home last night, we changed plans. (and sorry ahead of time for the blurry iPhone pics)



and I wasn’t hungry for dinner yet, and everyone knows you can’t eat on an empty stomach 😉

After a drink or two, we hit up a Thai restaurant, Nana Thai before the game.


I still wasn’t starving, so I got two smaller plates – the spring rolls:

Then, finally, we hit up the volleyball game.

It was bittersweet. It makes me wish I was willing to give more of myself to the sport when I played in college. Shoulda woulda coulda though, right??

Well I suppose I should do a load or two of laundry 😉 Then I’m meeting a girl friend for a  run! Sad to think that I would be running the Hot Chocolate 15k right now. Instead I’ll be running a much shorter distance…in Normal instead of Chicago.

Winner’s High

Kinda like a runner’s high, but it’s still there the next day 😉




Last night after working at the BIC and training a client, I came home starving! Weird, because it was only 5:30!


Flat bread pizzas are one of the best quickie dinner ever, f’reals. And! I’ve finally used up all the leftover veggie baked beans!


After dinner, I tooled around with Niko and the hubski for a bit, watched a One Tree Hill episode, and then headed over to the courts. The sand courts!



Last week the tournament started and this week was the final four and the championship game. We were ranked first seat so we played our first game at 8:00 and then played the winner of who was playing on the other court at 9:00. The 8:00 game was pretty easy. I still got a good workout, but we got it over with in about 45 minutes. Now the second game – the championship game – was a little different. This one took forever, and was three games to 25 long. Luckily we pulled out ahead and won it all! It felt amazing! I was beaming! And luckily, the hubski got a few good pictures of it, too.

I wasn’t really hungry when I got home, but knew I planned on waking up and getting in a workout in before work, so I had some Kashi and almond milk before calling it quits.


Woke up this morning (at 6:45!! on a school day!!) and guzzled some iced cold deliciousness:


before heading out on a 3 mile interval run. I did a quarter mile warm up, and then a down and back of…

mile 1: 9:06

mile 2: 8:59

mile 3: 8:57

and then a quarter mile cool down. Not too shabby!

I’m going to go devour some overnight oats that are chillin’ for me in the fridge…mmmm 🙂 Got a long one today – lots of clients and work at the BIC. Catch ya on the flip side!


Are you competitive against other people? I am pretty competitive. I played sports all my life, and I just love winning. I just do. I’m not mean about it, but I’ll play my little heart out to win. Even in running, I’ll pick someone out that I really want to beat, and try, try, try. That said, I’m generally just competitive with myself (in life) and actually wish for others’ prosperity/success!

Separation Anxiety


After my speedy four miler yesterday morning, I had a hankering for some hot oats. But now oats in a bowl…


It was worth every sweat bead that hot oats after a hot summer run like this produces.



Then I got ready and zipped off to the office for a bit. Around mid morning, I decided I’d take a long lunch, so I came back home and took advantage of the glorious day by taking Niko for another quick stroll.

Lunch was a wrap! Quick and easy always does the trick.

I really miss the pets now that I’m gone during the day again. It was really hard to leave and come back to work. Is it uber pathetic to have separation anxiety from your pets?!
I even ate lunch with Niko on the bed!

Then I went back to work for the afternoon to learn about the job of who I’m replacing. Fun schtuff.

Last night was volleyball night, but it was a late-ish one, so I had a couple hours to get some work done and relax beforehand.

Dinner was quick. Amy’s Medium Chili with Mary’s Crackers Garden of Eatin’ Blue Hot Chips


I completely thought I was pouring Mary’s Sticks and Twigs on my chili, when I noticed that it wasn’t sticks and twigs at all, but Eden’s Blue Hot chips! And ya know what? Eden’s Blue Hot chips make a darn good chili topper!


Lacking in the veg department, but I don’t see any veggie police around…

I had another beer after while playing volleyball (we won! And my mad skillz are back!) and then came home for a snack before bed:

Quarter Life Changes

Heya friends! Thank you SO much for all the amazing and supportive comments on my half marathon! I was just beaming when I was reading through them. 🙂
I had the best tasting Ezekiel pizza ever tonight…

First I toasted the tortilla in a 400 degree oven for 5 minutes, and then spread a layer on a layer of hummus:

topped with veggies – sun dried tomatoes, kalmalata olives, capers, spinach, artichokes and then popped it back in the oven for 5 more minutes:


So it’s day two after the half marathon and I’m still feeling pretty great! My quads are definitely sore, but honestly my biggest pain point in the injury I endured when falling down the stairs getting ready for the race:


That left a mark! haha. If anything it’s a good story?

Quarter Life Changes

OK. So I’ve talked about it enough, now it’s time to finally share with you all the exciting things that have been going on in my life!

1. I signed up for a Group Fitness certification preparation class! It’s 6 classes, each 4-5 hours long between the months of June and July. I plan on getting certified and start teaching in July. I think I’d like to teach some sort of lifting class, step class, or kick boxing class.

2. I’m starting a new training plan! No…not a triathlon 😉 My first sand volleyball game is this Wednesday and I know it’s just for fun, but I want to train for the game again! I played up until my second year in college, and have missed it so. So three to four days out of the week, I’ll be working out with the husband doing plyo (we did the Insanity Fit Test this morning…holy sweat, blood, and tears.) I’ll still be running, as I have a 9 miler in June, but the focus will be mainly on being able to jump higher, get off the ground faster, and move easily in all planes of motion 🙂



3. I QUIT MY JOB at the big insurance company! I put my (three week) notice in on Friday. Training and working at the office has proved to be too much, and I’d like to dedicate more time into my training business.

IMG_5511So for the past few months, the husband and I have been making some smart financial decisions by sacrificing our lifestyle just a wee bit, cutting spending (Running Around on a Budget, anyone?) and adding to our savings. We have also worked super hard to become essentially debt free besides the cars and the house. So it’s changed the lifestyle just a wee bit, but hopefully the business will just keep growing and growing. I’ll also be starting to work staff at the gym part time. My first day doing that is this Saturday.
I’m super excited for this new journey and you guys have been nothing but supportive and hugely amazing. You instill confidence in me every day with the comments you leave and I really, really appreciate it. It just makes me absolutely value the sense of community in the blog world.


I guess I kind of consider the changes going on part of my quarter life crisis  evolvement. If I weren’t to take the risk to pursue this, I know myself and know I would regret it completely. I know I’d look back one day, probably sitting in a cubicle saying, I wonder where I’d be if I pursued my personal training business. The conditions are right for taking it: I’m young (25)  with no kids yet, financially stable, and Shane (and my family!) is incredibly supportive. Hopefully it’s the right decision 🙂


What risks have you taken in life that forced you to sacrifice something to take the risk? Besides this, the last risk I’ve taken was a couple years ago. At the end of 2008, I declined my contract at the big insurance company as my previous position (org support specialist) to get a promotion to my current position (project planner.) It wasn’t a sure deal that I’d get the job, but I wanted it so bad and worked for it so hard, that for me it was worth it. I was jobless for one week and then on the last possible day they could call me to extend the position to me, they did. I could not believe it. It’s been great working there, but there has been so many not-for-the-good changes happening this year. I won’t go into detail, because I don’t know who all reads this blog, but it got messy and just very discouraging for me. So glad I’ve found something that drives my passion.
