Losing the Hound, Chicago Bound

*pants* Hi guys. I just had what could have been the most tragic experience…

I was cooking a waffle – breakfast as usual – when I saw Niko at the back door, wanting to go potty. So I let her out while I cooked my waffle. And in about 10 minutes, I went to go let her in; except I didn’t see Niko.

I saw this:

The gate was left open! Niko doesn’t get out. She just doesn’t. Let alone get out for 10 minutes or more. I didn’t think. I immediately ran out side, bare foot and in towel, and ran to the front and to the back shouting her name.

I ran across the street, and then all the sudden, here she comes, she was playing in the trees behind our fence the whole time, it seemed. My heart slowly returned back to my throat as I realized how much this pup means to me!

And then finally sat down to eat my waffle.

IMG_8849 Niko by my side 😀

Before this fiasco, I got in a lovely 5 mile run. I tried to get a negative split on it, but the beginning of mile three is all uphill. It’s a fight I wasn’t going to win. However, I was pleased at my 9:13 pace – not as good as Monday’s 9:00 pace, but I’ll take it 😀

Hopefully this morning doesn’t set the tone for the rest of the day. It’s going to be a whirlwind today! After working at the BIC, I’m headed straight home to grab my stuff and head to the train station. I’ve got a Healthy Living Summit to go to! It’s HERE!! I’m pretty pumped. Tonight I’ll be staying at my cousins’ condo in Evanstan, and then taking the L over to the hotel in time for the Frito Lay tour! I’m hoping to blog as much as I can while I’m there, but we’ll see how much "free" time there is 🙂

Yesterday was basically a go-go-go day. I went-went-went from the BIC, to a doc’s appt., to a business meeting! That filled up my day until the sun went down.

Luckily, I prepped ahead of time so I could fuel my on-the-go antics with on-the-go-meals!

Well, breakfast wasn’t on-the-go:

For some reason, I woke up craving hot oats despite the sizzling temps outside.

I started with a cup of water, and then added a mix of 1/3 c. oats, 1 T. chia seeds, 1/2 scoop of protein powder, 1 t. maca powder, and a little sea salt. Then I added a banana and stirred until it started a-boilin’.

Obviously I topped it up with a little almond butter…which wasn’t enough. There was another dip/dunk/dive into the almond butter jar before these oats were blogging history.

Coffee to go!

IMG_8816 IMG_8815

Ever since Shane quit smoking (still going strong!!) he quit coffee, too. He says they go too much hand in hand for him; that he can’t do it. Well I keep forgetting to make less, which leaves me with a LOT of coffee. Buzzzzz 😉

Off to the BIC I went and had lunch at my desk – a to-go lunch of course:

Super simple here guys – a homemade veggie burger atop a bed of lettuce and romaine with a dollop of hummus.

I had to leave work a little early for my doctor’s appointment (just a check up) so I ate my afternoon snack just before leaving – overnight oats in an Oikos container!

with some dried cherries – best dried fruit in overnight oats in my opinion 🙂

After the doctor’s appointment, I headed home to get my workout in. I can’t remember the last time I used my elliptical, but I knew I wasn’t going to be running outside with a heat index of 100º +. No way jose! It was an all right work out. Got a little ab work in between there too.

FINALLY done for the day, I knew just what to make  have Shane help make for dinner.

I chopped the veggies…

Then Shane manned the grill…to come up with this!

The sweet corn tasted like candy, friends. Candy.

Well I’m off to go calmly get ready for work – catch ya tomorrow from Chicago!!! Chi-Town Bound! 😀

Typically Typical

Hi guys! Happy Tuesday 😀

Yesterday went pretty swimmingly albeit it was one of those my-mind-can’t-concentrate-on-one-thing-for-five-minutes type of days. You know when you just have SO much to think about, so you almost think about it all at once? No bueno. However, I feel stupid for complaining about such trivial things, so moving on!

An early morning 5 mile run helped the psyche a bit:)

5 miles in exactly 45:00 which means each mile was an average of exactly 9:20 pace.

Typical whole wheat protein waffles

with the typical delicious topping. Typically scrumptious! 😀

After training a client I got a little work done at home and pre-packed for the Healthy Living Summit (!!!) I won’t really pack until the morning I leave. If I pack now, I’ll just pack things I need in between then and now and it will be on messy suitcase. 🙂

I also got in a lower body strength sesh in before my nooner (my noon training session people, geez!)

Lunch was leftover veggie pizza:

One big slice + half of one cold slice while I was waiting the 60 seconds for the microwave. Heh 🙂

The rest of the afternoon I worked on a website I’m going to reveal soon! It’s a website/blog just for personal training/fitness related topics and it’s been (slowly) in the works for a while.

Snackage was some chocolate covered banana chips that I could hear calling my name from the depths of the produce drawer where I purposely buried them.

So amazing.

And addictive – watch out!

A little later in the afternoon, I trained my last client, came home to water the flowers and take the Niko pupster for a walk, and popped in some leftovers (polentil) :

and a BIG salad of one whole zuchinni, one tomato, a few mushrooms, and some romaine. Yummmm!

Throughout the night I nursed this baby:

and this baby:

Poor Shane pulled a muscle (my guess is his sartorius muscle) while playing in his football game last night. He can barely walk! I think a trip to the doctor might be in order…

I also watched the ridiculousness that is the Bachelor Pad. I think this might be the last episode I watch of this show. It was just TOO much. They basically picked the most dramatic contestants of each show, which I can handle – in bits and pieces – but not all in one show.

Well I’m out – gotta buuuusy day today at the BIC and training clients. Catch ya’ll latas 8)

Glowing Sunrise Run

Good morning to yooouuuu! That was sung in the tune to a “good morning” song my pastor once sang during a summer church camp way back from my youth. That song brings back bad memories of unreasonably early mornings, unseasonably cold weather, and unbearably tight pants (I forgot to bring any long pants at all, thus ended up sharing with my best friend’s pants who was half my size, bhaha.) Flashback over!

This morning’s breakfast was a big ole waffle fail! After this morning’s 4 miler, I wanted waffles like nobody’s business. Once I heated up the waffle maker, I realized we were out of whole wheat flour. I didn’t let it stop me, and used oat bran flour instead.

waffle fail. It came out a mess and stuck to each side of the waffle maker, but I was determined to eat it anyway. Is that so wrong?

But with a topping of G.Y. + almond butter + vanilla stevia and a side of iced coffee, it can’t be too bad, right?

Right! So back to the run. I was actually excited to go on my run when I popped out of bed this morning. I had downloaded a fresh play list (think Drake, Eminem, Enrique and Do or Die – when all else fails, Do or Die makes  awesome running music imo) and the weather was amazing. I started out the door just as the sun was going up, and the clouds were literally glowing. I think I like it!  Oh yes I like it!

The run stats weren’t too bad either! 4.25 miles run with an avg. pace of 8:59 – hey that’s still under a 9 min/mile!

Yesterday wasn’t too busy for a Wednesday, and included working at the BIC and training two clients – one of which was a newbie! Her session went wonderfully, and I think she got a lot out of it. Job<—satisfying.

Lunch was a mexican fiesta atop a bed of romaine:

Think the innards of the other night’s enchiladas + a whole ‘nother tomato (I just wrote strawberry…wtf?)

I made dinner after I trained, and it was simple and delicious!

IMG_8511 Sweet potato fries ever so lightly coated in a mix of EVOO, PB, and S&P:

Plus some morning star chick’n nuggets (so does leaving out the “e” in chicken the vegetarian way to spell it or something!?)

I’m late! I’m late! For a very important!…unit meeting.

Today’s “food day” at the BIC where we all bring in something. I was a bit lazy after training last night, so my contribution will be something from Great Harvest Bread. Probably just as well 😉

Creative Fuel’s A-Burnin’

Mornin’! How ya feelin’ today?

At the moment, II feel…rushed? I didn’t wake up in time to get my planned 3.5 mile run in, so instead I did a quick n’ speedy 2.5 miler. I managed my time well, too:

Mile 1: (first .5 was warm up at 9:40) 9:33

Mile 2:8:28 (alternating sprints for .2 and recovery jogs for .1)

Mile 2-2.5: 7:51 😀

The weather has cooled off a bit since this weekend, which made for phenomenal running weather!

Yesterday, productivity was the name of the game. After all the weekend festivities, I had a lot of catching up to do.

My day started a bit later than typical Mondays do for me. I got to wake up an hour later than usual because I didn’t have a client this morning and I welcomed the extra sleep. Although I didn’t eat several hours before bed last night, it took a good hour for me to work up an appetite for breakfast. So I walked Niko, did some laundry, and worked on the blog. Finally, hunger set it.

Do I really have to tell you?

whole wheat protein waffles. Switched up the topping a bit by using vanilla stevia instead of maple syrup (because we were out) and I added a half of a banana in there for good measure.

I was so full after eating this. It’s better as a post-run breakfast, since I always come back from a hard run famished. But I’ll take it;)

With fuel in belly, I went upstairs to the office to work, work, work away. My creative fire was a-burnin’ when I woke up, so I took full advantage by working on a project I’m involved in with my client-turned-business partner. It’s one that cannot get pushed to the back burner, so it’s imperative to seize the motivation to work whenever it appears. This is an example of when my to-do list gets thrown out the window. When I feel the need to write, cleaning, creating plans, and grocery shopping can get pushed to the bottom of the list.

I worked up until I headed to the gym to get back/chest workout in, and then hopped on the elliptical for about 20 minutes. I wanted to take it easy on my legs, since Sunday I both ran a tempo run and had a leg strength training sesh. The stems were a wee bit sore yesterday. After training, I had to hit up Target, the post office (Lara Bars are on there way, winners!) and a grocery store.

Purchased this lil’ gem for some quick fuel:

Now, if you’ve been a reader for a while, you know I’m not a calorie counter, but I was very surprised to see that there were 260 calories in this little bottle!! And all it is is fruit juice…craziness I tell ya.

Once home and showered, I made a real lunch:

My favorite part of working part time at the BIC? I get to make real lunches some days during the week!

Tofu marinated in tamari, vanilla stevia, EVOO, sea salt, and apple cider vinegar:

 IMG_8485       IMG_8493

Sweet potato fries.IMG_8486

Both were roasted on the same pan at 425º, for 30 minutes, flipped half way through.

Then it was time to make the house sparkle. Even though I just scrubbed the floors last week, I had to again yesterday. Typically, I only get down on my hands and knees to scrub the floors once a month, and then once or twice a week, I’ll hit them with the Swiffer wet jet. Well, yesterday while shopping for Swiffer pad refills, I refused to buy them at nearly a dollar per pad. The Swiffer boy cot sounded like a good idea yesterday… haha Even so, nothing’s better than a good scrubbing I suppose.

After some more paper work, PT work, and taxes stuff, it was time to start dinner!

On the Menu:

His and Hers Enchiladas!

Sautéing up the veggies (plus some sweet corn added later)

One veggie enchilada comin’ atcha!

Salsa on one side, sour cream on the other:

IMG_8492 IMG_8491

Dessert was some All Natural Frozen Yogurt:

IMG_8493Pralines and cream – delish 🙂

Well I gotta bounce on outta here! Gotta get ready because today’s going to be a loooong one 🙂

Do you make a “to-do” list? How do you organize it? I typically write it out in the order I want to get the tasks done…that way I won’t worry that I won’t have enough time to complete them and it makes it more realistic in terms of including too many tasks. But like I said, sometimes ya gotta go with how ya feel!

Pure Evil

G’morning! Getting a late start to posting this morning because I decided to get in a (semi-)long run this morning. Figured I better get it in today, because this weekend is going to be jam-packed with wedding festivities!

How are you guys doing today? Is it heat wave where you are too? I’m guzzling water as we speak, but I don’t know if there’s much hope. But hey, I’m not complaining…I’d rather have it be a heat index of 115º than a wind chill of below zero, nah mean? (know what I mean)

Yesterday after working at the BIC, I had about an hour to spare before heading to the gym, so I made a quick and light dinner- part 1:

Gardein veggie chick’n fingers with some sweet corn.

For the corn, I just boiled a cob of corn for several minutes, and then cut it off the cob with a knife. The Gardein strips, I just burnt to a crisp (oops)

My second client of the night had to cancel, so I had a little more time to spend with the hubski than planned. We spent the time with another love:

Sauvignon Blanc. I’ve never had sauvignon blanc before, but it was pretty good! I’d describe it as a little less citrusy than Pinot Grigio? But I’m not wine connoisseur…

IMG_8264 IMG_8273

I just knew it was tasty.

And then I made my version of protein ice cream, which is basically just banana soft serve, protein powder, carob powder, and a dab of PB.

It was ‘aight. Regular ol’ banana soft serve is the way to go. Actually, I’m sure Heather’s protein ice cream is delicious, but my blender will not do the kind of damage to ice cubes like a Vitamix will. But speaking of Vitamix, I got the husband to admit that I WILL get one! One of his friends got one, and that gave me some advantage 😉 See, Shane – OTHER people we know pay this amount of money for a blender too!! This is progress, people! The question is when.

I also ate a peach somewhere in there, but this is the only evidence I have to prove it:

Other than that it was a pretty uneventful night. I finally got a good solid rest, though 😀

This morning

Albeit the solid rest, the alarm sounded way too early this morning. In my opinion, any alarm that goes off before 5:00 a.m. is evil. That’s all there is to it. Pure evil.

However, one snooze and still not 5:00 later, I arose, made some coffee and got ready to train a client. Right before I left, I made a peanut butter banana dog to eat on the way:

I knew I was planning a 6 or 7 miler afterward, and wanted some fuel in my system before running. On the way to the gym, the guy on the radio told me there was a heat advisory until 8:00 p.m. tonight and I should stay indoors at all costs. Naturally, after training my client, I headed outside to the trail and ran six miles. If he knew I’m sure there would be a finger waving right now.

I maintained 9:40 as an average pace, however mile 1 was 9:23 and mile 5 was 9:59. What have I told you about using mile 1 as a warm up mile?! Geez!

After the run, I determined that there’s likely no possible way to replenish the copious amount sodium I lost through sweat. I was sweating so much it was burning my eyes! And I dropped my key about 5 times trying to unlock the car door.

Once showered, stretched, and dressed, I tended to breakfast.

Are you getting tired of seeing Whole Wheat Protein Waffles for breakfast yet?

Because I don’t see myself getting tired of eating them any time soon 😉

IMG_8312At least I kept it fresh by topping it with a peach this time?

OK. I have a maid matron of honor speech to write. Yikes!

Hope you all have an absolutely fantastic Friday!! 😀

Meta Writing

It’s a technical term. I technically made it up in my head 😉

Hi guys! How ya doin on this fine Tuesday night? I decided to post tonight instead of tomorrow morning, because if I went with the latter, I’m not sure there would be a post to publish. Tomorrow is an endurance day. By that, I mean I’ll be working sunup to sundown. Hardcore.

This morning I had to get in a supah quick run. I’d planned on running a three mile interval run, sprinting for .2 miles and jogging for .1 miles for 3 miles total. Kinda like reverse HIIT. That’s a technical term too 😉 After realizing that I pressed snooze two too many times and I didn’t want to be caught running around the house yelling, “sh!t! I’m late!! Crap!!” I cut it down to 2.5 miles. Actually…who am I kidding, I still ran out the door saying those exact words, but that’s neither here nor there.

Post-run breakfast:

One bigass whole wheat protein waffle with the usual toppings. Guys, this stuffed me to the brim. I didn’t have time to pack a lunch for work, but that’s OK. This held me for five hours until I meandered down to the cafeteria to grab an apple and a banana to eat with a handful of almonds. I just didn’t want anything heavy.

Before heading home, I munched on a chocolate brownie Lara Bar. Lara Bar really hit the mark when concocting these flavors. This was pure excellence. Still rating the cookie dough flavor numero uno out of the ones I’ve had so far (Carrot Cake and the Brownie) but this one falls closely behind. So good, with no artificial-tasting flavor.

I told you guys how I’ve been STARVED lately and just end up making whatever I can get my hands on for dinner, so I played it safe today and made a Green Monster to hold off the hunger beast within.

IMG_0059 It provided some energy to help the hubsky plant the veggies one of my clients gave me!

Sweet peppers, hot peppers, and tomatoes. Grow baby, groooowwww 🙂

Later the husband finally mentioned the word dinner and I was chopping veggies in five seconds flat.

It was a grill night, which meant all I had to do was chop and season the veggies. Perfect.

Mound o’ veggies.IMG_0066

Had them with grilled potatoes, a veggie burger, and a glass of red vino. Totally delicious and nutritious.

Dessert was my book, the patio, and my dog. The ultimate summer evening can be considered a dessert, m’friends.

Mental Stories

Today I realized how much I “write” stuff in my head. Whether it’s for the blog or for another project I’m working on, when I have time to be idle and not concentrating on something, my mind always goes into writing mode. By this I mean, I was writing this post in my head on my walk from the BIC building to my car. As I was planting the plants, and as I was waiting for the husband to talk about dinner (I’m hungry, damnit! 😛 )

Writers (we’ve all got a little writer in us!) do you have a writing dialogue going on in your head when you’re not concentrating on a task at hand? – or while you are…I’ll take a side of ADD with my inner dialogue 😛 Like I said, I do! Sometimes I get so deep in thought that I almost have to shake myself out of it LOL. And I actually thought about this question while mentally writing. What is that, meta mental writing? LOL

Have a fabulous night, everyone, and an even better hump day! See you Thursday morning, and don’t forget to enter my New Flavors of Lara Bar giveaway! 🙂

Fashion Plates Police

Good*yaaawwwn* Monday morning! I was up pretty early to train a client, but I think I might squeeze in a nap after my second one. I slept like crapola last night!

What a weekend! 🙂

Saturday, as you know, I didn’t get into the race, but instead attended a group power class. Power power:

Just yer’ breakfast quesadilla. Inside the Flat Out wrap was a mixture of banana, almond butter, and protein powder. Deliciousness!

After power and then groceries, we were off to our parents’ to celebrate Father’s Day! My parents’ have a pool, so we kicked it poolside the whole day:

Niko joined in on the fun, too!

I use the term fun loosely here 😉

Does this look familiar?

Poor drowned rat-dog:(

She prefers to watch from a distance.

heh 🙂

Throughout the day, we noshed on veggies and hummus, fruit, and chips n’ guac.

I had two of my dad’s famous G n’ T’s (gin and tonics) while there as well.

Then we cleaned up and headed to Shane’s dad’s house for some visiting – and took he and his girlfriend out for dinner. It was a very fun day all around:)

Sunday was a scheduled rest day, and man was I dragging! I headed to the gym to train a client after making some waffles:

The waffles were topped with my signature breakfast topping now a days – Greek yogurt + almond butter + pure maple syrup. Seriously guys, whether it’s oatmeal, pancakes, or waffles, try this topping!

I also topped it with the biggest blackberries I’d ever seen:

Remember that drink that was really trendy for a hot minute? The blackberry berries remind me of these little guys.

This was the stuff dreams were made of;) Oh, nostalgia.

After breakfast, I trained a client, cleaned, and worked on a creative project:

Kombucha + lavender candles + positive thinking CD (a brainwaves CD my client gave me!) = creative fuel. And although this fuel served my creativity appetite, it did nothing for my belly.

I’ve had a bag of lentils for who knows how long, and yesterday was the day they’d be eaten. The night before, I was talking to Shane’s dad about being vegetarian. He was vegan for about seven years, and we were talking about Boca burgers, and all the hard to pronounce ingredients in them. In fact, when Shane grills out, he doesn’t even call it a veggie burger! He says, “hun – your disc is ready to eat!” LOL

That got me to thinking – it’s been a while since I’ve made my own veggie burgers! My friends, the homemade veggie burger dry spell hath ended:

IMG_7804I made a ton – enough to freeze a few! Recipe will be posted soon (hopefully today!) They were very good! So good, that I even thought Shane might like them. It’s been a while since I’ve forced suggested he try some of my vegetarian fare. But just like how Shane is with The Real Housewives, he just doesn’t understand veggie burgers. Someday, someday….

Sometime throughout the day, I also made another French Press of coffee:

This did the trick!

Also had a JUICY plum:

IMG_7809And caught Clarabelle sneaking in a nap:

After some lounging, writing, more cleaning (oh, Sundays…) and reading it was about dinner time. A bit on reading…since blogging, my reading material has decreased tremendously. I used to be able to read book after book after book.  Especially when I was young, sometimes I’d read three in one day! Granted, those books were about 100 pages long and involved people looking like skeleton’s in pictures, but I dominated those books, nonetheless.

But I digress…

Back to dinner. I didn’t use all the lentils I cooked for the veggie burgers, so I thought it’d make a good addition to some red sauce.

I made his and hers, of course. The one of the left is red meat sauce and the one on the right, red lentil sauce.

I poured the sauce on top of some pan fried polenta, and called it done.

Alongside were some green beans, and we called it done.

This time, we BOTH gobbled it up fast.

We watched the Informant the rest of the night, which ended up being pretty funny! Lots of Deep Thoughts, hehe

Well I’m off to catch a spin class, train a client, and get some work done.

Come back later on tonight for special post answering some readers questions about how I went from working at a desk job to working in the fitness field 🙂

What’s one thing you remember from when you were young that you don’t think anyone else remembers? Fashion plates, anyone?

FP_2I’m pretty sure I was actually meant to be a designer 😉
