Catching up on weekend posts? This weekend I:

Created my 2010 Thanksgiving Menu

I played Bunco, went to a drag show, and went to an awesome spin class!

This weekend, I also spent an entire day with my besties, Kim and Destiny!

I’ve mentioned on the blog before that Kim is getting married next year, and last month she asked D and I to be bridesmaids! Well, Saturday morning was reserved for trying on bridesmaids dresses!

After trying on several styles:

We found the PERFECT color and style for everyone. I couldn’t believe how easy it was! The dresses are so very cute, too – for bridesmaids dresses.

I couldn’t help but think back to my wedding. Kim’s pretty laid back about it all, but knows what she wants. It’s easy to let other people tell you what you should do, and Kim’s doing a good job of keeping her voice heard – she is the bride, afterall!

While the rest of the girls headed to lunch and shopping, I met up with Shane and his grandma! Both of their birthdays were this month, so some celebrating was in order 😀


Coincidentally, his grandma lives in the city where we were trying on dresses, so I just met them there at the restaurant, Red Lobster…which had this many –> 0 vegetarian options. Heh. I was about to order the broccoli and baked potato when I asked the waitress if this ever happens, and she recommended the lobster pizza without lobster.

Works for me!


It was very tasty – a bit greasy – but  I ate all but two little slices!!

The food was good, but it was awesome catching up with Shane’s grandma. She’s such an amazing person. She’s a yoga instructor, practices yoga every day, eats different food (like nutritional yeast and whatnot,) and has been a pescatarian for over 30 years. AKA – we had a lot to chat about 🙂

After lunch, I met back up with the girls for what else, but a wine tasting!!

After sampling quite a few pours, we each bought what seemed like a cart full, and then headed to the hotel that Kim was staying (since she lives in Wisconsin) to hang out a couple more hours.


Since I only live about an hour away, I didn’t get a hotel, and when Kim and her fellow Wisconsinite bridesmaids went out for the night, Dest and I headed on home.

Starving, and not wanting to make dinner, I swung by Moe’s on the way home for a whole grain veggie burrito:

It was such a great day all in all. I definitely think part of healthy living is having a few good friends to share your thoughts, feelings, and good times with. Do you agree?


Well I’m going to go get geared up for spin. I’ve really been loving spin classes lately, can ya tell? 🙂 It’s such an awesome form of cardio.

I’ve already gotten in my pre-spin class breakfast with my go-to pre workout breakfast as of late:


So good, so light, and so fueling for a morning workout!


How’s the Monday outlook for you? Hopefully not too stressful! Hope you guys have short weeks this week too. I’m not working at the BIC this week, but I’m still training clients and playing volleyball.


My Thanksgiving Menu 2010

This coming Friday, I’ll be hosting my first ever Thanksgiving dinner at the Running Around Normal household! Granted, it will just be four or five people, but I’m still so excited!

This morning’s task was to create a menu. For the past hour, I’ve been searching recipes, blogs, and magazine for a simple, yet creative Thanksgiving menu. The guests I’ll be serving are pretty traditional and not too fancy (in a good way!!) so I tried to keep a back-to-basics mindset while working.

And I think I’ve got it!

On the actual Thanksgiving Day, we’re going to my aunt’s house. She always makes the most delicious feast, so this year, I’ll have a glimpse of what she goes through every single year! To help her out, I plan to bake this apple pie:



and perhaps a pumpkin pie

and then also these portabella lasagna rollups as a vegetarian main course (and a carnivore side dish)



Do you bring a side dish or dessert where you eat Thanksgiving? If so, what are you bringing this year?

On that note, I’m off to go for a run, take a yoga class, and then help out with a shower.

Drunko Bunco and Drag Queens

Hey guys! Blogging from my car right now:




Don’t worry, I’m parked. In a parking lot;) Got a few spare minutes in between stops, and blogging is cheaper than shopping 😉

It’s been a busy past 24 hours!! Yesterday during the day, time was spent training clients and cleaning the house, in usual Friday fashion.


In between training, I took a quick break for some lunch while watching Glee!


This would be Wednesday night’s leftovers in combo bowl form. I added some spinach and broccoli for a little extra veggie powah:



Such a good combination of flavors this time around 😀

After training my last client, it was time to get ready for Bunco! I hadn’t been to bunco the past two months, so I was pretty pumped up 🙂 This month, my friend Theresa was hosting, and I knew there wouldn’t be much veggie fare, so I had a snack before leaving:


I love Oikos and all, but Fage is where it’s at, guys. Actually, Fage Total is where it’s at, but 2% is good too. The fat free version is just…no, though.


With some currants, flaxmeal, pumpkin, and vanilla stevia – it was a very tasty bowl!

Then I grabbed my bunco goodies:



balls and wine. What more does one need?


And headed to drink some vino and play some bunco!


When we finished the rounds (I tied for biggest loser – ha!) a few of us made a last minute decision to hit up a local gay bar down town, Bistro. They were hosting a drag show – and I’d never been to one.

Have you ever been to a drag show? What are your thoughts on them?

However, waking up this morning I second guessed my decision. I had signed up for a spin class this morning, and felt the three and a half drinks I had last night coursing through my veins.

Spin ended up being a great class, too! And I felt 100% better afterward. However, I had to be in Peoria by 10 this morning, and in Paige-fashion, I overestimated the amount of time I had to get ready.

After a quick shower and makeup (no time for hair!!) I booked it over to Peoria to meet my besties for some bridal fun:


More to come on that later 😉

For now, I’ve got to run to meet Shane and his grandma for a birthday lunch, then meet back up for the girls for some more fun. Not sure what the night will entail. I have a shower that I have to help with tomorrow, so it probably won’t be too late of a night.

Thanks for all the non-pb breakfast ideas! Sounds like I need to go get some eggs! I used my last one in a batch of waffles the other day 😉

Wanna know something funny about Niko?



Whenever Shane or I sit down to eat, she knows it’s meal time. As soon as the form hits our mouth, she walks over to our bowl and starts chowin’ down too.




The little weirdo can never just eat at her bowl, though. Oh no. She has to bring it over to a rug and only then will she begin to actually eat it.

And sometimes, she’ll actually bring the food pebbles over to whoever’s eating and set it on our feet.

This morning I had to wake up super early for an early morning client. Before leaving the house, I had my favorite “light breakfast”


A banana, chopped, topped with a little drizzle on honey and then about a tbsp of raw wheat germ.


Perfect amount of carbs, fat, and protein to getcha goin’.


Burn Baby, Burn: Legs and Back Circuit Workout

I had to have a little something on my stomach, because after training my client, I trained myself! I completed a 45 minute circuit workout that focuses on legs and back. It was killa! I’d love to share!

Complete the workout circuit-style, going from one exercise to the next. Complete the circuit three times. Before trying this workout or beginning any workout program, please consult with your doctor first.

Warm up: 5 minutes light cardio

leg warm up: walking lunges—> 10 down, 10 back

1. Step ups w/ 10 lb dumbbells

2. Lat pull down

3. Back extension w/ 10 lb. plate

4. Bulgarian Split squat w/ 10 lb. dumbbells

5. Single point dumbbell row w/ 15 lb. dumbbells

6. Single leg stiff leg dead lift w/ 25-35 lb. dumbbell

7. Dumbbell dead lift w/ 25-30 lb. dumbbells

8. Rear delt fly w/ 5-8 lb. dumbbells

Cool down: 5 minutes light cardio

Afterward, I had a bit more time, so I completed about 25 minutes on the elliptical before peacing out to grab some breakfast before my next client coming up.



A cherry-vanilla protein smoothie was just what I needed!

1 frozen banana, 10 frozen cherries, 1 c. almond milk, 1/2 tsp. vanilla extract, 1 scoop vanilla pp, 2 handfuls of spinach, 1 tbsp flaxmeal



Topped with some brown rice crispies (newest obsession, btw!!!) and some granola.

Then I decided some healthy fats were also in order.

And Now Peanut Butter Disgusts Me

Morning! Happy Thursday 😀 Can’t believe how fast the week has flown buy. I know I always say that, but I guess it’s always supah fast when things get busy. ahem.

Last night after training I client, I decided to try out running a four mile run. If my body wasn’t up to it, I’d stop. I’ve been going light on exercise this week just to give my body a bit of a break. However, I got through the four miles and called it done. I was at about a 9:15 pace – so an easy pace for my training, and it was just the heart pumping cardio I needed.

Once I left, it was already getting a bit late for dinner. So I flew in the door, begun slamming around pots, pans, knives, and ingredients and wound up with this:



This would be (never)homemaker’s peanut sauce over some brown rice and grilled, chopped portabello mushrooms:



it was ok. The sauce was just a little too much. Too … sweet? salty? flavory? I’m not sure what was off about it.

These dishes were good, but not good all together, ya know?

Since tomorrow at the BIC we are celebrating November birthdays for the month, it’s encouraged that everyone bring in a dish to help the celebration.

So, i finally made Mama Pea’s dough balls.



And sampled the obligatory piece of dough or two before popping them in the oven.



Then it happened.

It came on all the sudden, like a bad cold.

I think I OD’d on peanut butter.

Even now, the thought of it repulses me. I know, I know. Blasphemy! What will this morning’s breakfast consist of?! I sure don’t know!!

It’s going to be a busy one at the BIC today. Deadlines! Deadlines! However, tonight is Power Yoga and then dinner with the girls! 😀

Bare Floors? Clean it Up!

Afternoon! Hope your Wednesdays are going swimmingly!

It sounds like the majority of us tend to live life on the wild side when it comes to eating foods past their expiration. One of these days, I’m sure at least I will learn the hard way 😉 Dodged a bullet yesterday, though!


I recently discovered a life changing tool and I feel the need to share with you guys.


Did you guys know about the “bare floors” setting on your vacuum?!


Was I just deprived of this button as a kid?

Did my mom just feel the need to use a broom and dust pan growing up?

So long Swiffing the same area twice and three times!

Since I’ve discovered the bare floors setting, I vaccuum the entire main floor – even the wood floors! And the great thing is that if you have tile floors, the vacuum is able to pick up all the dirt and dust in the grout – when my usual swiffing is not.

After vacuuming, I just go over it again with the Swiffer to get under the hard to reach places.



Wa-La. 😀

Since you guys now probably either think I am a domestic genius or a complete buffoon, let’s move on to lunch.

Foreshadowing in this morning’s post probably could have told you that lunch was on the go today. But I packed up this lunch in less than 5 minutes. It can be super easy and quick to eat lunch on the run – and not run through a drive through!


Mah main meal:


Homemade veggie burgers with feta and hummus atop a bed of greens.

My side meal:


Plain Oikos yogurt with pumpkin puree and pumpkin butter mixed in

My dessert meal:

And some almonds for my pre-training, pre-workout snack.

Easy peasy and packed in 5 minutes 😀

Leftovers, Late Nights, Lost Spin Classes

*Warily opens eyes*


Oy. When my alarm clock went off this morning to meet my friend, Heidi at spin class, I wasn’t sure it was going to happen. I got up, I poured coffee, and then realized there was no way I was getting my butt to spin class, bags packed for the day, with breakfast + lunch and snacks in tote.

I planned to…

but then yesterday I got a call from a friend who happened to be coming in from Chicago to the train station here in town with no apparent way on how she would get home (an hour away) from there. A last minute call to me was her solution. I wasn’t ecstatic about cancelling off clients that I had last night, but I also didn’t want my friend to be stranded. So I picked her up at the train station and drove her home, and drove back. When I got home, I had some blog work to do and some clients to email – so it was a late one.

Needless to say, this guy will be my BFF for the day (sorry besties, I love you guys too 😉 )



Perhaps I’ll get in a run and lift session after my evening clients tonight, or perhaps I’ll take another rest day. My body’s been craving rest this week, it seems. I did get in a quick 20 minute power yoga podcast this morning, though!

Unsurprisingly, dinner was also eaten on the run last night – I reached into the depths of the fridge, and forgot all about the butternut squash lasagna that I’d made a couple months ago!


After making the judgment call that the green-ish tinge on the outside of the lasagna was freezer burn, not mold (I’d say I was 60% certain – LOL) I micro waved it up and inhaled it.



Added a little green for texture and good measure (the salad, not the “mold.” 😉 )



And hey, I’m not sick this morning, so I must have made the right call!

 How risky are you when it comes to deciding whether to eat food that may or may not have gone bad? I consider myself pretty risky, but I went with going ahead and eating the lasagna just because it had been in the freezer – can mold grow in temps that cold anyway??!
