Polentil

I created polentil after making Brown Rice Lentil burgers and had far too many lentils leftover. The result was fantastic.

 

Polentil

Ingredients:

1 lb. tube of plain polenta

4 T. EVOO

2 c. red sauce

1 c. lentils

 

Directions:

Slice 1 tube of polenta into 1/2 inch thick rounds

(that looks like ham right now…but it’s not!)

Heat up the olive oil in a pan at medium heat, and add the polenta slices:

Saute for about 8 minutes, flipping the slices half way. Transport the rounds to a paper toil to rid of excess oil.

Meanwhile, heat up the red sauce in a sauce pan over medium low, add lentils.

After heated thoroughly, plate the polenta and top with the lentil mixture. Add parmesan cheese if you prefer.

Eaten with a simple spinach salad, this is a decadent but healthy dinner!
