Football, Wine, Steak tacos=Sunday Funday!

Hey all! I hope your weekend left you feeling rested and rejuvenated! Thanks to my Sunday, I can say, “yes, yes it did!”

The whole day was pretty relaxing. Unfortunately, my ankle is giving me trouble still. I’m afraid that even my new running shoes can’t stop the pain. Actually..I’m really, really scared that I might have already caused it too much damage. Not to mention, I have my first 10K on Saturday. Yikes… Needless to say, yesterday was a rest day. “Movement” included taking Niko for a walk and cleaning a wee bit. Oh, I forgot one other movement I did yesterday – the main movement! Cooking!

Lunch was pretty freakin’ awesome. My asparagus was about to go bad soon, so I drizzeled some olive oil over it, then wrapped some smoked turkey around it, and popped it in the oven for 12 minutes.

To go along with it, I made some edamame hummus!


Then I topped with some edamame beans and stuffed face!


Twas quite the delicious lunch. And it is courtesy of Ellie Kreiger – it’s a new recipe from my new cookbook!! You all should get this book if you like to cook; the recipes are phenomenal!

Afterward, I piddled around the house for a few hours (piddling included reading for an hour outside, going to Fresh Market – yes, again – and playing with the pup.)

Clarabelle thought she could take Niko for a walk until she realized she needed thumbs to do that!

Then it was time for the Bear’s game!!!! wine, and steak tacos 😀


This is a great pinot – soo smooth.

For the steak tacos, I just grilled some flank steaks from Fresh Market on the stove (I’d have had Shane man the grill, but he was busy alllll day working on cars)


and then carved them into thin slices when done. Then I heated up some corn tortillas, and topped them off with this salsa:


Mmmm. It was just a diced avocado, a diced 1/2 english cucumber, diced red onion, diced jalepeno, and the juice of 1 lime! It topped off the steak perfectly. Can you guess where this recipe came from? 😉 Yep, my girl, Ellie.


I had two. They almost knocked my head off.

I’ve never made steak tacos before. I guess it kind of scared me, since whenever we have steak, Shane cooks it on the grill. However, these were delectable and easier than I ever imagined.

Things I’m looking forward to today:

  • Getting a massage! My friend, Trina, recently got her license in massage therapy, and is giving my a 60 minute massage right after work! woo hoo!!!
  • Gossip Girl and One Tree Hill premier tonight! I’m way too excited for this, LOL
  • Making a new recipe out of aforementioned cookbook yet again for dinner tonight
